🫐 Blueberry “Dump” Cobbler
Ingredients:
1 cup blueberries (fresh or frozen)
1 cup all-purpose flour
1 cup sugar
1 cup milk
1 stick (½ cup) butter
Optional:
Pinch of salt
½ tsp baking powder (for a little fluff)
A splash of vanilla or cinnamon
1 tsp lemon juice or zest tossed with the berries
Instructions:
Preheat oven to 350°F (175°C).
Place the stick of butter in your baking dish (8x8" or similar) and let it melt in the oven while it preheats.
In a bowl, mix flour, sugar, milk, and any flavor boosts (vanilla, cinnamon, etc.).
Pour the batter evenly over the melted butter without stirring.
Drop the blueberries over the top — again, no stirring. Let the oven do the layering magic.
Bake for 45–50 minutes until golden and bubbly.

Ingredients:
1½ cups vanilla Greek yogurt
1–2 tbsp powdered sugar (adjust to taste)
1 tsp honey or maple syrup
Optional: a dash of vanilla extract or citrus zest
Instructions:
Stir together until smooth and fluffy.
Chill for soft-serve style OR freeze for 2–3 hours, stirring every 30 minutes for a scoopable froyo texture.

Story behind the dish:
There are some recipes born out of love, others out of tradition, and then there are the ones created purely out of necessity. This one falls into that last category. I came up with this quick and comforting dessert when I found myself in a tight spot. Time was limited, money was even tighter, and I had a craving that wouldn't let go. I couldn’t make a trip to the store, and I didn’t have ice cream or whipped cream on hand. But what I did have was a little creativity and just enough basics in the kitchen to make something special.
I felt like an Iron Chef in my own home, surveying my fridge and pantry like they were part of a cooking challenge.

Though I used blueberries, this recipe is incredibly flexible. You can use strawberries, peaches, cherries, blackberries, or even canned fruit if that’s what you have. A splash of lemon juice or a pinch of cinnamon can elevate the flavor, but the basic recipe stands strong on its own. That’s what makes this dessert so reliable. It adapts to what you have, not the other way around.
