10 Iranian vegetarian foods suitable for all tastes

These vegetarian dishes come from Iranian culture and are native to the country.

If you are interested in vegetarian foods but your menu is not very varied and you are tired of having to duplicate your food, I suggest you try the native Iranian dishes. Nations food can always be tasty and exciting, but Iran is one of its main attractions. Here's my recipe for these indigenous foods, and you can also increase or decrease the amount to your liking. I hope you enjoy these simple and delicious vegetarian dishes at home. Their names maybe sound a little hard to but their ingredients are very accessible and hopefully, you can include them in your food menu.

This food is provided for two persons. If you are cooking for fewer or more, change its usefulness.

1. Mirza Ghasemi

This dish is more specific to the north of Iran and is used for grilled eggplant on fire because the smell of smoke gives it a unique taste. But there are alternatives. You can make it on a barbecue or a gas cooker.

Ingredients:

  • 5 medium sizes eggplants
  • 3 big tomatoes
  • 2 eggs
  • 5 cloves of garlic
  • 1 tablespoon tomato paste
  • Your favorite oil
  • Salt and pepper as desired

Preparation:

  1. Do not remove the skins and stems of eggplants. Wash eggplants with skin and place them on a gas cooker or barbecue. You do not need to separate the eggplant tail. Make a few slits on them with a knife. When one side bakes, turn it over to cook the other side. Insert the knife in it to make sure it is cooked. It should be perfectly soft and juicy.
  2. Grate the garlic and roast in a little oil in a pan. Grate the tomatoes without skin and add the garlic to roasting.
  3. In the meantime, remove the skin of the eggplants by hand, place the eggplants on the cutting board and crush them with knives.
  4. Add salt and pepper and tomato paste.
  5. Add eggplants and allow all ingredients to fry well.
  6. Now gather all the ingredients with a spoon in a corner of the pan and break the eggs in the empty pan side and stir well.
  7. When the eggs are cooked, mix them with other ingredients in the pan.

Your meal is ready. This food is served with bread. Some people make this food without eggs.

2. kookoo sabzi

You can keep the vegetables in the freezer and then use them whenever you like. If so, you have an instant meal. This dish is traditionally fried, but you can also help the oven to keep it healthy. Here is the traditional type of training.

Ingredients:

  • 2 cups of the fragrant vegetable mixture (coriander, leek, parsley, dill)
  • 2 eggs
  • 1 tablespoon chopped walnuts (optional)
  • 1 tablespoon barberry (Optional)
  • Oil for frying
  • Salt and pepper as desired

Preparation:

  1. Rinse vegetables well and let the water dry.
  2. Chop the vegetables.
  3. Whisk eggs with a fork and add to the vegetables.
  4. Chop the walnuts with a knife and add to the ingredients.
  5. Dry the barberry soaked in water and add to the ingredients.
  6. Add salt and pepper and mix well using a spoon.
  7. In a non-stick frying pan, pour the oil and add the ingredients to the frying pan then immediately spoon the ingredients over and spread in the frying pan to form the container. Now close the pan and wait a quarter. Then remove the pan and wait ten minutes (time may vary slightly) until one side is completely roasted.
  8. When one side is roasted, place a plate on the pan and carefully return the pan. Now on the side that is not yet fried, return kookoo sabzi to the pan again to fry the other side.

Your meal is ready. This dish is served with both bread and rice. It depends on your taste.

3. Nargesi

This dish is made from a combination of spinach and eggs, which is a tried-and-true combination. There may be other cultures as well, but this is an authentic Iranian vegetarian food.

Ingredients:

  • 2 cups Spinach
  • 2 eggs
  • 2 onions
  • 4 cloves of garlic
  • Your favorite oil
  • Salt and pepper as desired

Preparation:

  1. Chop the onions and fry in oil.
  2. At the same time, wash the spinach thoroughly and place in a pot and close the pot. Allow them to boil gently and to draw water.
  3. When the onions are fried, add the chopped garlic and fry.
  4. Add fully cooked spinach to onions and garlic and stir. Don't forget the salt and pepper.
  5. Add two eggs at the end. You can stir the eggs or you can let them lay on the spinach in the same way.

This food is served with bread. You can also add a little walnut to your ingredients if you like.

4. yatimcheh

You can also cook this dish without potatoes, but with potatoes, it gets more volume and tastes different. Finally, I will tell you what other changes you can make to its ingredients.

Ingredients:

  • 3 eggplants
  • 2 tomatoes
  • 1 onion
  • 1 potato
  • 2 tablespoons of tomato paste
  • Oil for frying
  • Salt and pepper as desired

Preparation:

  1. First, remove the skin of the eggplants and soak the eggplants in water and salt for half an hour to eliminate bitterness.
  2. Chop onions and fry in a pot.
  3. Cut the tomatoes into small squares and add them when the onions are fried.
  4. Chop eggplants into slightly larger squares and add to tomato mixture.
  5. Add tomato paste, salt, and pepper and stir them.
  6. Add as much as three glasses of water and allow to boil.
  7. Chop the potatoes into eggplant-sized squares and add to the ingredients.
  8. Close the pot and allow one hour for all ingredients to cook well.

This food is served with bread.

You can add other ingredients such as carrots and bell peppers to the dish. You can also use zucchini or both instead of eggplant.

5. adas Polo

Some make it with meat and some with eggs, but without these, adas polo still is a complete meal.

ingredients:

  • 2 cups of white rice
  • 1 cup of lentils
  • 1 cup of raisins
  • Salt, pepper, and cinnamon as desired
  • 100 grams of Butter
  • Egg (optional)
  • Date (optional)

Preparation:

  1. Soak the lentils, raisins, and rice for half an hour and then dry them.
  2. Pour all the ingredients into a pot and pour water on it. Put your finger in water to measure the proper amount of water. The amount of water should be such that the distance between the water and the ingredients is one and a half centimeters.
  3. Let boiling water come.
  4. After boiling water, add salt and pepper and cinnamon and close the pot.
  5. The water is drawn out, your food ready. Check that rice and lentils are cooked. Otherwise, add some water again.
  6. When cooked, melt the butter and pour over the rice.

You can make a fried egg and put it on adas polo and serve it. You can separate the kernel of a few dates and sauté the dates in oil or butter and set aside.

6. kookoo sib zamini

The method of preparation of this dish is very similar to kookoo sabzi but their ingredients are different. This dish can be prepared with both cooked potatoes and raw potatoes. They have two different flavors. I say try both but I will teach you here with raw potatoes that will take less preparation.

Ingredients:

  • 3 potatoes
  • 2 eggs
  • Oil
  • Salt and pepper as desired

Preparation:

  1. Grate the potatoes in a large bowl.
  2. Add the eggs and stir well.
  3. Add salt and pepper.
  4. Pour in a pan of oil and let it heat well.
  5. Pour the ingredients into the oil and spread it with a spoon.
  6. Leave for 10 minutes in the pan to cook well.
  7. Remove it from the pan and when one side is golden and let the other side be golden.

Serve this with bread.

7. kashke bademjan

The traditional way to prepare eggplants in this dish is by frying, but you can put them in the oven to make them not too fat and high in calories.

Ingredients:

  • 8 eggplants
  • 1 onion
  • 5 cloves of garlic

  • 2 tbsp of dry mint
  • Salt, pepper, and turmeric as desired
  • Chopped walnuts (optional)

Preparation:

  1. Peel the eggplants and cut them into thin slices.
  2. Drop them in water and salt to eliminate bitterness.
  3. Chop onions and fry in oil.
  4. After the onions are fried, add the garlic and sauté, and then remove the ingredients.
  5. Simply fry the eggplants in the same pan with very little oil until lightly colored, then put them in a suitable container and place in the oven to cook well.
  6. Put the eggplants in a large bowl after baking, and with the garlic and onions and mash them. (You can also use a food processor.)
  7. Pour some oil into the pan and sauté the dry mint in the oil. Add the spices, but do not allow for more than a few minutes as the mint becomes bitter.
  8. Add the eggplants to the pan and pour curd and half a glass of water to bring to a boil.
  9. Drain the water, mix well and add chopped walnuts.

This food is served with bread.

8. Falafel

This is cheap and popular street food in Iran that is served as a sandwich.

Ingredients:

  • 2 cups of raw peas
  • 1 onion
  • 1 potato
  • Salt, pepper, turmeric, and cumin as desired
  • 2 tablespoons of flour
  • 4 cloves of garlic (optional)

Preparation:

  1. Soak peas in water for 24 hours. This step is very important and must be observed.
  2. Pour all the raw ingredients into the mixer and turn on the machine, but do not allow the ingredients to become too crushed and not too large.
  3. Make circles larger than a dime like a photo with your hand and fry in oil.

Serve with onion and parsley or lettuce, tomato, and pickles in a sandwich.

9. Sambooseh

It is also a street food but in some restaurants, it is served as a light meal or appetizer. You can use the filo pastry or thin bread to wrap it.

Ingredients:

  • 4 large potatoes
  • 1/2 cups of Chopped parsley
  • Thin bread or filo pastry
  • Salt and pepper as desired
  • Oil for frying

Preparation:

  1. Boil the potatoes.
  2. Peel the potatoes and mash them well.
  3. Add the chopped parsley, salt, and pepper, and stir.
  4. Pour ingredients into bread or filo pastry.
  5. Fold the bread and fry in oil.

Usually, this dish is made in Iran as a triangle. You can serve them with your favorite sauce or dip.

10. Estamboli polo

You can eat it with or without eggs.

Ingredients:

  • 2 cups of white rice
  • 2 tomatoes
  • 1 potato
  • 2 tablespoons of tomato paste
  • 2 tablespoons of fried onion (optional)
  • Salt, pepper, and turmeric as desired

Preparation:

  1. Soak the rice.
  2. Chop the potatoes into small pieces and fry in a pan.
  3. Grate the tomatoes and add them to the potatoes.
  4. After frying, add tomato paste, salt, pepper, and turmeric. If you like fried onions, add the ingredients.
  5. Add the rice to the ingredients and pour the water into the pot. Put your finger in water to measure the proper amount of water. The amount of water should be such that the distance between the water and the ingredients is one and a half centimeters.
  6. Add a little more oil and salt.
  7. Boiling water, close the pot and wait about half an hour.

You can prepare a fried egg and place it on the rice and serve warm.
