Going vegan
I've wanted to go vegan for a couple years, and as life would have it, I developed a lactose intolerance so I was forced to cut down my dairy. The environment, animals and my health are important. I'm currently vegetarian and transitioning into veganism. It's an easy adjustment with commitment. Your budget may lower, if you're considering the switch. If you want to spend $20 for lunch and dinner in a week as a vegan, and you dont have allergies, sensitivities and intolerances to the ingredients, here you go: low sodium black beans, low sodium chickpeas, 3-4 sweet potatoes, spinach, red bell pepper, 1 pack of mushrooms, 1 canned corn, 1 jar of salsa, 1 small bag of rice, 1 small bag of lentils, 1 box of pasta, 1 jar of marinara sauce. The meals are black bean tostada, sweet potato gnocchi, grilled veggie pasta, stuffed sweet potato, roasted vegetable buddha bowl, black bean and mushroom fajita, sweet potato and black bean hash, chickpea and black bean salad, lentil bolognese, chickpea stir fry, rice and lentil bowl, corn and lentil taquitos. Breakfast ideas: Cereal with soy, almond, coconut, oat or rice milk, sliced bananas and raisins. Oatmeal with sliced fruit, jelly, maple syrup, or soy milk. Baked beans on toast. Toast or a bagel with peanut butter, jam, hummus, or margarine. Fresh fruit with vegan yogurt. Smoothie made with frozen banana chunks or berries and orange juice (add peanut butter or protein powder for a further boost). If you want to go from omnivore to pescatarian or vegetarian, I made a grocery list for you: quaker instant oatmeal, whole grain bread, black olives, black beans, whole grain pasta (chickpea kind is better), hummus, bananas, grapes, blueberries, pineapple, blackberries, strawberries, oranges, popcorn, lettuce, fruit preserve, pretzels, marshmallows, chocolate, broccoli, spinach, tomatoes, plant milk, lemons, onions, bell peppers, garlic, curry, basil, oregano, cinnamon, avocado, vegenaise, ketchup, liquid broth, beyond meat and gardein meat imitations, mustard, french dressing, nut butters, fruit juice, whole grain cereal, tea, coffee, liquid creamer, hot chocolate, whole grain bagels, celery, mushrooms. Here's a fun and quick vegan burrito recipe: 1/2 cup rice, 1/4 cup pinto beans, sautéed onions/mushrooms/peppers, 3 tbsp guac, 1 tbsp coconut yogurt, tortilla. Dont rush the process. If you want to be a junk food vegan, Target may be your newest friend. White Castle, Taco Bell, Chinese, Mexican, Chipotle. Oreos, chips, dairy free ice cream. The occasional healthy food swaps include roasting vegetables in drizzled olive oil so theyre like chips. Nut butters, fruit, crackers. Myokos. Nutritional yeast. Flavored seltzer, san pellegrino. For all my diy muas, i gotchu. Elf, pacifica, alba, wet n wild. Should you decide to go alkaline vegan, i know some instagrammers and foods. Amaranth greens, wild arugula, avocado, bell peppers, chayote, cucumber, dandelion greens, garbanzo beans, izote, kale, lettuce, mushrooms (except shiitake), nopales, okra, olives, onions, sea vegetables, squash, cherry and plum tomatoes, tomatillo, turnip greens, zucchini, watercress, purslane, apples, burro bananas, berries (except cranberries), cantaloupe, cherries, currants, dates, figs, seeded grapes, seeded key limes, mango, seeded melons, seville and sour oranges, papayas, peaches, pears, plums, prickly pear, prunes, seeded raisins, soft jelly coconuts, soursops, tamarind, burdock, chamomile, elderberry, fennel, ginger, raspberry, tila, amaranth, folio, kamut, quinoa, rye, spelt, tef, wild rice, hempseed, raw sesame seeds, raw sesame tahini butter, walnuts, brazil nuts, olive oil & coconut oil (dont cook), grapeseed oil, sesame oil, hempseed oil, avocado oil, basil, bay leaf, cloves, dill, oregano, sweet basil, tarragon, thyme, achiote, cayenne, onion powder, sage, habanero, pure sea salt, granulated seaweed, pure agave syrup, date sugar. Happy holidays, Sunday and Veganuary.
