
Vanilla Cake
Ingredients:
21/3 cups (290g) of All-purpose flour.
2 teaspoons Baking powder
1/2 teaspoon Salt
1/2 cup (115g) Softened unsalted butter
Beat three eggs, one after another, until they are incorporated.
1/2 cup (120ml) Oil
1 teaspoon Vanilla extract
The remaining 1/2 cup of sifted flour mixture, beat until mixed.
Beat together 1/2 cup (120 ml) buttermilk until smooth.
Repeat the procedure with an additional 1/2 cup (120 ml) of Buttermilk
Split the batter about two, 20cm round cake pans
Cook for 350F (175C), about 40 minutes, until a toothpick placed in the center comes out clean
Allowing the cakes to cool in the pan for 5-10 minutes before removing them.
Let them cool completely
Cream Cheese Frosting
Ingredients:
150 gr (2/3 cup) softened Unsalted butter.
Using a medium speed, beat the cream cheese until it combines and smoothens out to become 1 3/4 cups (400g).
1 1/4 cup powdered sugar (160g).
2 teaspoons Vanilla extract
Beat 1/2 cup (120ml) cold heavy cream until it forms stiff peaks and gently fold into the whipped cream cheese mixture.
Assembly:
Cover the upper side of one of the cake layers with a thin layer of frosting.
Then, place the second layer of the cake on top.
In the process, cover the top and sides of the cake with frosting evenly.
Chill at least 2 hours before serving, if desired.
