
Ingredients:
- 4 medium-sized potatoes, boiled and mashed
- 1 cup chopped cauliflower
- 1 cup chopped carrots
- 1 cup chopped bell peppers
- 1 cup chopped onions
- 1 cup chopped tomatoes
- 2-3 green chilies, chopped
- 1 tbsp ginger-garlic paste
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 2 tsp pav bhaji masala
- Salt, to taste
- 1/2 cup butter
- 8-10 Pav buns
- Chopped coriander leaves, for garnish
- Lemon wedges, for garnish
Instructions:
- In a large pan, melt the butter over medium heat.
- Add the cumin seeds and mustard seeds and let them splutter.
- Add the chopped onions and sauté until they turn translucent.
- Add the ginger-garlic paste and sauté for 1-2 minutes.
- Add the chopped tomatoes and cook until they become soft and mushy.
- Add the chopped cauliflower, carrots, and bell peppers and mix well.
- Add the turmeric powder, red chili powder, pav bhaji masala, and salt to taste. Mix well and cook for 5-7 minutes.
- Add the boiled and mashed potatoes and mix well. Cook for another 5-7 minutes, stirring occasionally.
- Mash the vegetables with a masher or a spatula to get a smooth consistency.
- Garnish with chopped coriander leaves and lemon wedges.
- Cut the Pav buns into halves and toast them on a tawa or griddle with butter until golden brown.
- Serve the hot Pav Bhaji with the toasted Pav buns, garnished with coriander leaves and lemon wedges.
