Recipe For Pav Bhaji.

Ingredients:

  • 4 medium-sized potatoes, boiled and mashed
  • 1 cup chopped cauliflower
  • 1 cup chopped carrots
  • 1 cup chopped bell peppers
  • 1 cup chopped onions
  • 1 cup chopped tomatoes
  • 2-3 green chilies, chopped
  • 1 tbsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 2 tsp pav bhaji masala
  • Salt, to taste
  • 1/2 cup butter
  • 8-10 Pav buns
  • Chopped coriander leaves, for garnish
  • Lemon wedges, for garnish

Instructions:

  • In a large pan, melt the butter over medium heat.
  • Add the cumin seeds and mustard seeds and let them splutter.
  • Add the chopped onions and sauté until they turn translucent.
  • Add the ginger-garlic paste and sauté for 1-2 minutes.
  • Add the chopped tomatoes and cook until they become soft and mushy.
  • Add the chopped cauliflower, carrots, and bell peppers and mix well.
  • Add the turmeric powder, red chili powder, pav bhaji masala, and salt to taste. Mix well and cook for 5-7 minutes.
  • Add the boiled and mashed potatoes and mix well. Cook for another 5-7 minutes, stirring occasionally.
  • Mash the vegetables with a masher or a spatula to get a smooth consistency.
  • Garnish with chopped coriander leaves and lemon wedges.
  • Cut the Pav buns into halves and toast them on a tawa or griddle with butter until golden brown.
  • Serve the hot Pav Bhaji with the toasted Pav buns, garnished with coriander leaves and lemon wedges.
