
Ingredients:
1 liter whole milk
1/2 cup sugar
1/2 cup chopped nuts (almonds, pistachios, cashews)
1/4 tsp cardamom powder
1 tbsp rose water
2 tbsp sliced almonds for garnish
Instructions:
Pour the milk into a heavy-bottomed pan and bring it to a boil on medium heat. Stir continuously to prevent the milk from burning at the bottom of the pan.
Once the milk has come to a boil, reduce the heat to low and let it simmer for 1-2 hours, stirring occasionally. The milk will start to thicken and reduce in volume.
Once the milk has reduced to about half its original volume, add the sugar and stir well. Continue to simmer the milk for another 30-45 minutes, stirring occasionally, until it thickens to a creamy consistency.
Add the chopped nuts, cardamom powder, and rose water, and stir well. Cook for another 5-10 minutes until the nuts are well incorporated into the mixture.
Remove the pan from heat and let the malai cool to room temperature. Transfer it to a serving dish and garnish with sliced almonds.
Refrigerate the malai for at least 2 hours before serving to allow it to set.
