Recipe For Garam Masala.
SPICE BLEND AND SEASONING

Ingredients:
- 1/2 cup cumin seeds
- 1/2 cup coriander seeds
- 1/4 cup black peppercorns
- 2 tbsp green cardamom pods
- 1 tbsp black cardamom pods
- 2 tbsp cloves
- 2 tbsp fennel seeds
- 1 cinnamon stick (about 2 inches long)
- 1 nutmeg, grated
- 2-3 dried bay leaves
- 1 tsp mace powder
Instructions:
- Dry roast 1/2 cup cumin seeds, 1/2 cup coriander seeds, 1/4 cup black peppercorns, 2 tbsp green cardamom pods, 1 tbsp black cardamom pods, 2 tbsp cloves, and 2 tbsp fennel seeds in a pan over low heat until fragrant. Stir occasionally to prevent burning. This should take about 5-7 minutes.
- Add 1 cinnamon stick broken into pieces and continue roasting for another 2-3 minutes until fragrant.
- Turn off the heat and add 1 grated nutmeg, 2-3 dried bay leaves, and 1 tsp mace powder. Mix well.
- Let the mixture cool completely.
- Once the mixture has cooled, transfer it to a blender or spice grinder and grind it into a fine powder.
- Sift the powder through a fine-mesh sieve to remove any larger pieces or seeds that were not ground properly.
- Store the Garam Masala in an airtight container in a cool, dry place.
