
Ingredients:
- 500g boneless chicken pieces, cut into small cubes
- 1 tsp ginger paste
- 1 tsp garlic paste
- 1 tsp red chili powder
- 1/2 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp garam masala
- 1 tbsp cornflour
- 2 tbsp all-purpose flour
- Salt to taste
- Oil for deep frying
- Curry leaves for garnishing
Instructions:
- In a bowl, mix the chicken pieces with ginger paste, garlic paste, red chili powder, turmeric powder, cumin powder, coriander powder, garam masala, cornflour, all-purpose flour, and salt. Mix well until the chicken is coated evenly with the spices. Set it aside for 30 minutes to marinate.
- Heat the oil in a deep frying pan over medium-high heat.
- Once the oil is hot, add the marinated chicken pieces to the pan in batches and deep fry until golden brown and crispy. Drain the fried chicken pieces on a paper towel to remove excess oil.
- In another pan, add a little oil and heat it over medium-high heat. Add some curry leaves and sauté them for a few seconds.
- Add the fried chicken pieces to the pan and toss them well with the curry leaves for a minute or two.
- Remove the chicken from the pan and place it on a serving plate.
- Garnish with some more curry leaves and serve hot with your favorite dipping sauce.
