Out in the land where the red rocks sing

The chili’s hot it’s a fiery thing

Green or red pick your fate

Or mix them both together on your plate

It’s not Tex-Mex

No no it’s not the same

Not Colorado either with a borrowed name

New Mexico flavor burning hot and bright

Hatch chili growing in the desert sunlight

Christmas on a plate feels just right just right

There’s nothing like it on a hot dry desert night

Stacked enchiladas with layers so full of cheese

Tamales you can smell through the streets

Sopa pias floating light as air

Honey drips down your shirt but you don't care

Spicy heat and hot desert skies

Flavor so bold it stings your eyes

Every bite a story untold

A tale of sun and souls of gold
