Coconut Curry Chicken is a flavorful, creamy dish that combines tender chicken with a rich coconut milk-based curry sauce. It’s a perfect keto-friendly meal that’s both satisfying and nutritious. Ingredients:

1 lb (450 g) chicken breast, cut into cubes

1 tbsp coconut oil

1 cup coconut milk (full-fat)

2 tbsp red curry paste

1 red bell pepper, sliced

1 zucchini, sliced

1 cup spinach leaves

1 small onion, finely chopped

2 cloves garlic, minced

1 tbsp fresh ginger, grated

1 tbsp fish sauce (optional)

1 tbsp lime juice

Salt and pepper to taste

Fresh cilantro for garnish

Instructions:

1.Prepare the Ingredients:

Cut the chicken breast into cubes.

Slice the red bell pepper and zucchini.

Finely chop the onion, and mince the garlic.

Grate the fresh ginger.

2. Cook the Chicken:

Heat the coconut oil in a large skillet or pan over medium-high heat.

Add the chicken cubes and cook until browned on all sides, about 5–7 minutes. Remove the chicken from the pan and set aside.

3. Cook the Aromatics:

In the same pan, add the chopped onion and cook until translucent, about 3–4 minutes.

Add the minced garlic and grated ginger, and cook for an additional 1–2 minutes until fragrant.

4. Make the Curry Sauce:

Stir in the red curry paste and cook for 1–2 minutes.

Pour in the coconut milk and bring to a simmer, stirring to combine.

5. Add the Vegetables:

Add the sliced red bell pepper and zucchini to the pan.

Cook for about 5 minutes until the vegetables are tender but still crisp.

6. Combine and Simmer:

Return the browned chicken to the pan.

Add the spinach leaves, fish sauce (if using), and lime juice.

Stir well to combine, and let the curry simmer for another 5–7 minutes until the chicken is cooked through and the sauce has thickened slightly.

7. Season and Serve:

Season with salt and pepper to taste.

Garnish with fresh cilantro before serving.
