A cheesecake filled with lots of love

Life is all about getting the balance right!

I am all for balance. I may not always get it right but it is something I always work very hard at.

From flying helicopters to travelling to some of my favorite cities in the world, leading a life filled with energetic passion to actively make a positive difference to everything and everyone I come into contact with, brings me the greatest peace and joy.

Leading a life where I get enough exercise, outdoors, travelling, family time, time with treasured friends as well as ensuring I get my hobbies into my life is vitally important to my body, mind and soul.

Cooking and baking is something I have loved doing from the time I was a kid. It is indeed very therapeutic to me.

As per my mum’s wishes I baked a cheesecake for her birthday this year. Cheesecake is my favorite dessert. It just hits that spot. It elevates my mood in ways no other dessert can.

This recipe was shared to me while I was still in school by my aunt who now lives in Canada. I must have been around 11 years old. It is a recipe that has never failed me in the many times I have made this cheesecake.

I am sharing this recipe for more people out there to enjoy it.

So here goes.

Ingredients

A packet of digestive biscuits. Any type of your favorite biscuit/cookies would do. In South Africa I have found the 200 grams Bakers Tennis Biscuit to be the best.

3 Tablespoons of butter or margarine of your choice.

2 X 250 grams of low fat or full cream smooth plain cottage cheese.

2 X 385 grams condensed milk

1 teaspoon lemon juice

1 X 250ml fresh cream

1 slab plain chocolate of your choice for decorating

Method

Preheat oven to 150 degrees celsius.

Crush the biscuits finely. I use this food processor which I purchased from Temu.

Melt the margarine/butter in the microwave. Add the melted margarine/butter to the crushed biscuits and mix together.

Press down this biscuit and butter/margarine mixture in a cake tin and leave aside.

In a separate mixing bowl, add the condensed milk and cottage cheese. Thereafter add the lemon juice. Mix all well together with a blender/mixer. I purchased this mixer online recently from Temu and it works perfectly well.

Thereafter pour this mixture onto the biscuit mixture in your cake tin.

Place this cake tin in the oven and allow it to bake for 25 minutes.

Allow to cool.

Once cooled down completely, decorate the cake with the fresh cream which must be whipped as well as with the chocolate shavings.

Leave to set overnight in the refrigerator.

And there you have it! A yummy delicious cheesecake!

Best enjoyed chilled with a hot cup of your favorite coffee or tea.
