Super Easy Ham and Potato Casserole

A delicious and easy casserole made with leftover ham from the holidays.

Don't throw your leftover holiday ham out. Try this delicious recipe of buttery-baked potatoes, sliced onions, and bubbly cheddar cheese. This recipe is a meal in one, but you can also serve it as a side dish. It is one of my favorite ways to use leftover ham.

Super Easy Ham and Potato Casserole

Prep Time: 5 Minutes

Cook Time: 35 Minutes

Servings: 6

Ingredients

  • 5 medium-sized potatoes, chopped
  • 1 onion, sliced
  • 4 cups of leftover ham, chopped
  • 2 cups of cheddar cheese, shredded
  • 2 tablespoons of butter
  • Salt to taste (optional)
  • Ground black pepper to taste (optional)

Instructions

  1. Preheat the oven to 375°F.
  2. Smear a 13" x 9" baking pan with butter.
  3. Wash and peel the potatoes. Chop to your preferred size and place them in the pan.
  4. Slice the onions and lay them on top of the potatoes in the pan.
  5. Sprinkle with salt and pepper (optional).
  6. Cover the pan with aluminum foil and bake for 30 minutes, or until the potatoes are tender.
  7. Chop the leftover ham into bite-sized pieces. Using a spatula, fold and combine the ingredients in the pan.
  8. Top with shredded cheddar cheese.
  9. Leave the foil off and place the pan back into the oven.
  10. Bake until the cheese is bubbly.
  11. Remove from the oven. Let it cool for a couple of minutes, and serve.

Garnish with green onions and crispy bacon pieces. This meal goes great with a side salad and bread. It tastes even better the next day.

Reheating Directions

Remove from the refrigerator 60 minutes in advance. Cut the casserole into squares to allow the center to heat without overcooking the edges. Preheat the oven to 350°F and cover the dish with foil. Reheat for about 20 minutes or until heated well. The temperature in the middle should be at least 165°F. Remember, the goal is to warm it. You don't want a dry, overcooked casserole.

Can I Freeze Super Easy Ham and Potato Casserole?

Yes! You can freeze this casserole before or after baking. Meal prep is a great time saver, and if you use leftovers, you will save money.

To freeze before baking, line the dish with foil, leaving an overhang on all sides. Prepare the casserole, but leave off the cheese, and don't smear the pan with butter. Fold the foil over the food and freeze overnight. Pull the foil to pop the casserole out of the dish. Wrap it with more foil. Place in a freezer-safe container, label it, and put it back in the freezer. When you're ready to bake, remove the foil and thaw it in the refrigerator for at least 24 hours. Then add butter to the pan and bake following the directions above.

To freeze after baking, line a dish with foil, leaving an overhang on all sides. Then fill it with the already baked casserole and place it in the freezer. Once frozen, remove the casserole, and wrap it with more foil. Place in a freezer-safe container or freezer bag, label it and set it back in the freezer. When you're ready to thaw, remove it from the freezer and defrost it in the refrigerator for at least 24 hours. Then follow the reheating directions above.

With leftover ham, you can make an assortment of dinners. Toss it in a salad or use it as a pizza topping. Try it for breakfast recipes. Fry leftover ham and serve with scrambled or fried eggs and toast. On the other hand, you could make a ham and cheese omelet.

These are just a few ideas, but the possibilities are endless! You can't go wrong with a grilled ham and cheese sandwich, green bean casserole, or bean and ham soup. Making a big pot of potato and ham soup sure sounds scrumptious. You could add a little diced ham to macaroni and cheese to liven it up. Your kids will love it!
