Vespr Craft Coffee was born because creator and owner Edd Siu had a passion for the coffee shop as the natural gathering place. It’s where we talk, write, work, plan, pass the time, or fall in love. With the idea of providing a space for meaningful experiences through coffee, the shop was born.

Vespr Craft Coffee opened its doors in Summer 2014 with a mission to be more than a coffee shop. The staff wanted to contribute to their customers lives in a meaningful way by letting customers experience coffee beverages in new, unexpected, and flavorful ways. This meant to think outside the box, to try unconventional methods untested by other shops, and to create drinks and experiences that engage the senses and intellect to the fullest extent.

Vespr sits in Eastern Orlando next to a large university. In its first six months, word of mouth about a new coffee shop in the area spread, and soon, young minds were seeking Vespr’s quite solace as a place to truly connect, have a conversation, and broaden their palate with new and unique drink offerings not currently being done by other shops in the area. In the last five years, Vespr has continued to thrive due to the dedication of its regulars. The shop has seen regulars fall in love, get married, brainstorm new business ideas, and even start up coffee shops of their own, all while sitting at Vespr’s coffeebar counter.

Conversation is not the only asset Vespr provides. The unique community comes together around wanting to learn more about really good coffee. Creator Edd Siu focused on teaching customers about the coffee by providing classes, tastings, cuppings, and flavor profile wheels to help teach customers about varietals in beans. The passion and dedication he showed for third wave coffee was apparent in every brew and pour.

Third wave coffee considers coffee an artisanal food like wine, rather than as a commodity. This artisanal craft occurs at all stages of production, from coffee bean growing, harvesting, and processing, to stronger relationships between coffee growers and coffee traders and roasters, to higher quality and fresh roasting, to skilled craft brewing.

Vespr embraced the third wave coffee mentality from the beginning, aspiring to the highest form of culinary appreciation of coffee, so that one may appreciate subtleties of flavor, bean varietal, and growing region. Distinctive features of being a Third Wave Coffee shop include buying direct trade, single-origin coffee, lighter roasts of the beans, and latte art. It also includes revivals of alternative methods of coffee preparation such as siphon brewing and pour-over brew, which are both available at Vespr.

Vespr invests in environmental responsibility, ethical business practices, and fairly traded ingredients. This ensures that those working hard at their craft are paid fairly and that we are minimizing or eliminating exposure of harmful chemicals. The company as a whole believes in minimizing the ecological footprint and giving back to our environment more than take from it.

Ultimately, Vespr wants to provide an environment of hospitality that you can call your second home. A place to meet like-minded people, make connections, and cultivate lasting friendships, all while learning more about the amazing third-wave coffee movement.
