Key Lime Mousse Cups are the perfect Diabetic friendly dessert. Delightfully sweet with a mellow key lime tartness and made in mini phyllo tart shells, they are perfect! Not to mention easy to make! It takes no time at all to bake the cups for a couple of minutes, mix the filling, pipe in and decorate to your choice.
These little desserts are a nice change from the same old chocolate dessert or candies usually given on Valentine's day... or any holiday for that matter. They have a wonderful light texture, great flavor, and are simply elegant in presentation! I think they would do well for a spring get together.
Diabetic friendly Key Lime Mousse Cups
My sister, Tanya and I are always looking for diabetic friendly desserts. We do this because our Dad is diabetic and we know that a lot of other people are too. Tanya and I started a food blog a few months ago and we try to include alternative meals and desserts for everyone. There are many options available nowadays for diabetic recipes.
These pretty little tarts are diabetic friendly, but you would never know! The reason is there is no added sugar. In addition, you don't even have to worry about artificial sweeteners either.
The key ingredient with any diet, diabetic or not, is to educate yourself as well as talk to your doctor before making any major changes to your diet. And it is important to remember moderation is the key!
The making of the dessert
The tart shells are crisped in the oven before anything else is done, making them perfect to refrigerate, and not get soggy bottoms. This can be done ahead of time. We baked frozen for about 5 minutes at 350 F.

The best part is that you can BUY the 2 packages (1.9 ounces each) frozen miniature phyllo tart shells! Happy days and stress free moments there! Plus, they are super adorable.
The filling is easy to put together. In a large bowl, beat the cream cheese, milk and juice until smooth; fold in whipped cream.

There is a little bit of time involved when filling the tart shells because the little cups are so small. In other words, we didn't want to make a mess. Instead, we piped the filling into them. Trust us, it is much easier and less messy.

Garnishment time
We garnished ours with key lime zest, raspberries, miniature roses, and our Simple Raspberry Coulis but the possibilities are endless! So have fun! Tanya liked the raspberries and lime zest but I liked how the miniature rose leaves and buds complimented the little mousse cups. Here is the link for coulis:

The Key Lime Mousse is light and creamy, with a delightful flavor of key lime, without being too tart. Served in mini phyllo tart shells, they are super adorable and easy to serve. In conclusion, we love that this is a diabetic friendly recipe as well!
Recipe time
Ingredients:
~4 ounces cream cheese, softened
~2/3 cup sweetened condensed milk
~1/4 cup Key lime juice
~1/2 cup heavy whipping cream, whipped
~2 packages (1.9 ounces each) frozen miniature phyllo tart shells
~Fresh Key lime zest, for garnish, if desired. You can also use fresh raspberries, miniature rose buds and leaves, or whatever you think will look really good per your tastes.
Directions:
~Preheat oven to 350 F.
~Place frozen tart shells onto a baking sheet and bake for 5 minutes.
~In a large bowl, beat the cream cheese, milk and juice until smooth; fold in whipped cream.
~Pipe into tart shells. You can try to spoon the mix in but we honestly had a hard time because the shells are so small. Plus, were messy bakers apparently.
~Garnish with your choice of decorations if desired.
~Serve immediately.
~Refrigerate any leftovers immediately
Servings variable depending on how many you make and also on your diet choices. I had like 3 in one sitting...don't judge.
