The Best Indian Chicken Recipe

Making chicken biryani from scratch is easy. You will need to choose your favorite cooking method and spices. Some of the most common cooking methods are baking or slow-cooking with a lot of oil. Another option is frying in a pan on low heat for about 15 minutes. The spices for this dish can be whatever you have on hand, but generally, you'll need garam masala, coriander, salt, cumin, turmeric, red chili flakes, and black pepper.

The Ingredients

Chicken Biryani

  • - 1/2 cup of basmati rice
  • - 3/4 of a cup of finely chopped onion
  • - 4 cloves of garlic
  • - 2 tbsp. oil
  • - 1 medium-sized red bell pepper, finely chopped
  • - 2 green peppers, finely chopped
  • - 1 medium-sized green chili, finely chopped
  • - 3 tbsp. tomato sauce
  • - 5 whole star anise (optional)
  • - 2 bay leaves (optional)
  • - A whole chicken breast, cut into small chunks
  • - Salt to taste - Water for the rice to cook in - Oil for frying the chicken in before cooking it

Step 1- Cooking the rice.

This dish is traditionally made with basmati rice, but you can use any type of long-grain white rice that you desire. The measurements for this recipe are for a large pot of rice, so be sure to adjust accordingly if you're cooking for one or two people.

  • 2 cups long-grain white rice (uncooked)
  • 1 tablespoon vegetable oil

Step 2- Cooking the chicken/veggies.

Once your rice is cooked, mix in the spices and saute them over medium heat. You can use butter or oil if you prefer, but you'll only need a tablespoon or two to do this. Once the spices are fragrant, add in the chopped onions and cook until they're softened. Next, add the ginger and garlic paste to the pan along with some salt and turmeric. Stir everything together until it's fragrant before adding in the chicken thighs. This will take about 10 minutes, so be sure to stir at least once every few minutes. If you have excess grease from cooking the chicken, make sure to discard it before continuing with this step. Once your chicken has been cooking for 10 minutes or so, add in your tomatoes and cook for another 7-10 minutes on low heat. Now that you've got all of your ingredients ready, it's time to start making your biryani!

Start by adding about two cups of water into a pot, followed by your cooked rice. Bring that mixture to a boil before turning it down to a simmer for ten minutes or so until all of the water has been absorbed by the rice and it's all fluffy again. Now comes one of the most important steps--cooking your masala! Add in a tablespoon each of cumin seeds and coriander seeds followed by some cardamom pods, cinnamon sticks, cloves, cinnamon bark pieces, nutmeg pieces.

Step 3- Cooking the raisins/sultanas.

Raisins and sultanas give the dish a nice touch of sweetness. The raisins in this recipe can be replaced with dried cranberries or dried apricots for a different flavor.

How to Cook Chicken Biryani:

In a large oven-safe pan, heat oil over medium-high heat. Add chicken and cook until brown on all sides, about 2 minutes. Drain excess liquid from the pan using a slotted spoon or cheesecloth before continuing. Reduce heat to medium and add the onions, ginger, garlic, cinnamon sticks, cloves, cardamom pods (or allspice), and bay leaves to the pan. Cook for 4 minutes, then add the tomato paste and cook for 1 minute more. Stir in the rice, salt, and water and bring to a boil on high heat. Cover with lid or foil and bake at 375 degrees Fahrenheit for 25 minutes until done cooking. Remove from oven and let cool 10 minutes before fluffing with a fork. Salt to taste before serving hot or cold with cilantro on top

Step 4- Garnish with almonds and cilantro.

The last step is to garnish your biryani with almonds and cilantro. Almonds and cilantro are both traditional garnishes that go well with this dish. If you don't have time to make the garnish, feel free to leave it out.

Step 1: The first step of making this dish is cooking the rice in chicken broth. The chicken broth is made by boiling chicken bones and water and then letting it cool down.

Step 2: In order to cook the rice, you'll need a pot or dutch oven big enough for your rice, water, and chicken broth to be able to fit inside of it. Put the ingredients into the pot/dutch oven and bring them to a boil on medium-high heat until the liquid has almost completely evaporated (there should be about two tablespoons of liquid left). Reduce the heat to low-medium and cover with a lid. Let this cook for 15 minutes without disturbing it so that all of the starch can get fully cooked in.

Step 3: After 20 minutes, remove the lid from your pot/dutch oven and continue cooking uncovered for another 10 minutes while stirring every now and then. This will allow some of the moisture from your rice mixture to evaporate before adding in your spices (more specifically salt, garam masala, turmeric) as well as herbs (cilantro/almond leaves).
