Who has time for cooking?

Around here I am known as the shortcut queen! Now, I don't take shortcuts with important life decisions, however, I definitely do in the kitchen!

I love to cook and I love to bake but unless you don't work (lucky you!) there is not enough time in the day to cook the kind of meals you would like to make.

My kids are now grown with kids of their own but when they were home I always wanted to cook for them. A little self satisfying, I suppose. Made me feel needed. I still to this day get a warm fuzzy feeling when one of them ask me to make something for them. On each of their birthday's I always let them choose what meal and what dessert they want. I get so much joy preparing it for them.

Now that I live alone, I don't cook as much. I am so used to cooking for an army it is difficult to cook for just me. A few years ago, I invested in an instant pot. Now I have two! It has revolutionized my kitchen!! All in one pot meals and usually in 30 minutes or less. Just make sure you get the non-stick pot that goes in it. Where was this magnificent contraption when my kids lived at home?

I have to admit, I am not the most patient person. Just another reason for my shortcuts. But that would fall into many categories in my life.....especially driving! Ugh, people are so frustrating on the road!

Ok, ok... getting back on subject. Cooking. So, I tried my hand at blogging to no avail. Again, lack of patience. Maybe, if I am being honest, a lack of what it took. I thought, my only niche could only be my love of cooking. But posting recipe after recipe, well, I got bored. And guess what I am going to post here?! LOL

I, myself, do not like trying to get to a recipe and having to scroll thru a whole story before I get to it. Come on, admit it, that's pretty much everyone! Not to mention, I am doing that very thing! (Is that hypocritical?)

The girls that I work with absolutely love my recipe's because they are so simple and take no time at all. Then, they give my feedback when they make one of my recipe's and tell me how everyone loved it! ☺️ (warm, fuzzy feeling)

I have a lot of recipe's for cold weather, yay! Not sure where you are but I live in Indiana where we have beautiful Fall weather and pretty cold winters. So, we like soups, stews, chicken-n-noodles.... comfort food! I never claimed it was the healthiest.

Take my Beef stew for instance. Everything in the instant pot and in 30 minutes you have a meal. I usually make cornbread to go with it. Jiffy mix, of course.

Recipe:

Beef stew meat

1 box beef broth

1 small can tomato paste

2 Tblsp Worcestershire sauce

1 tsp oregano

1 tsp garlic powder

diced onion

salt/pepper

baby carrots

4 small potatoes- diced

frozen peas and corn

Throw all ingredients in the instant pot, hit the meat/stew button and in thirty minutes you just thicken it by adding a little flour and manually heat for a couple more minutes. Soooo easy!!

I am not an ambassador for InstantPot, as a matter of fact, I recommend NuWave brand (not an ambassador for them either, just helpful info). It is cheaper and does everything the InstantPot brand does. Well, except make yogurt..... and who makes yogurt??
