Double Trouble Chocolate Chip Cookies

Ingredients

½ cup butter softened

2 Medium to large eggs

¾ Cup packed brown sugar

¾ cup white sugar

¾ cup white chocolate chips or chunks

¾ cup dark (or milk chocolate) chips or chunks

2 to 2 ½ cups of flour

1 tsp baking soda

1 tsp salt (make sure its fine)

Preparation

Alright let's get this ooey gooey Chocolate party started! Preheat your oven to 350 degrees

Add your dry ingredients into one bowl, flour, salt, baking soda mix with a whisk. Set aside.

In a separate bowl add your sugars, eggs and butter. Beat it guys, make it smooth and creamy looking.

Add your creamy wet ingredients into the flour, use a spatula to mix your cookie dough, now if you have a partner like mine, hes waiting for the spoon!

Once well mixed, get out a scoop or just a large tablespoon, drop your cookies an inch and a half away from one another.

All ovens are different and most bakers know their perfect temp for cookies. I go with 350, bake 11 to 13 minutes ( when they are lightly browned on top, use your judgment!)

Let cool down on a rack, for as long as you can stand to wait, pour a glass of milk, or tea, and dunk some double trouble! Careful that chocolate is going to be hot!

Tips and Suggestions

I really recommend if you are doing flour substitutions try Robin Hood Gluten free cup for cup blend flour. Not a chocolate fan, maybe there are allergies. Carb chunks work well. Baking is all about experimentation. A great man once said, there are no mistakes, just happy little accidents. Thankyou Bob Ross. How we miss you!

I remind you, all ovens are different. I've lived on the West coast, and in the mountains, Canada, and the US, and it really changes the way your cookies bake and lift or spread. A trick I learned, for even baking, is to flip your pans upside down. (Thank you Christina for that nifty trick) your cookies bake evenly like this. Use parchment paper for best results. The name, Double trouble, is homage to my children Shawn and Christina. Double the trouble, double the fun, double the smiles! Just those words conjure up misbehaving right, These were cookies I created for my children, the original double trouble, and did they love them. The subtle taste of the white chocolate, and rich dark chocolate, creamed butter, ooey gooey yes please! Soft on the inside a little crunchy on the outside.

Baking isn’t just baking, its magic, it's pouring your love and heart into something for people that you love. Cookies can say so many different things. ‘I’m sorry you're sad’, it says ‘Congratulations,I’m happy for you’ it says, ‘Cheer up things will be better!” It says ‘Thank you.’ Cookies are a universal language. Did you know that chocolate chip cookies were created in America, by a woman named Ruth Wakfield? The very first cookie was created in the 7th century AD in Persia. Around the 13th century it was a common treat to find in most cupboards in Europe, and the world. Just a bite of knowledge there! Do you get it? Bite of knowledge. Ha!

It's almost like relaxation therapy, your home fills with the sweet smell of bliss, childhood, nostalgia. That first dunk in an ice cold glass of milk and the sweet melted chocolate hits the tip of your tongue, and manages to cover the sides of your cheeks. BAM! Instant heaven. These store really nicely in a cookie jar, or freeze them. We give jars of cookies for Christmas, Halloween, Easter. It's a great project for families, who don't love cookies. Did I mention how much Teachers love cookies? Garbage men love cookies. Mom’s and Dad's love cookies. Just talking about them makes me want to make a batch.

The great part about this recipe is you can make your dough form them into balls and freeze them. Moderation. Bake a dozen instead of three at a time. I scoop my cookie down out and place on a cookies sheet, covered, in the freezer. This way no mess no fuss just time spent with the kids or family doing something together. All you have to wash is the cookie sheet when your done! I hope your kids enjoy them as much as mine did.
