Berry. Apple. Breakfast. Jaffle.

A three ingredient, 15 minute, life changer.

Nutricious. Delicious. A little bit Naughty.

Picture this. It’s 9am on a winter’s morning. You’ve just woken up. It’s cold, but skies are blue and the sunlight filtering through your bedroom window is warm.

Crisp, is the word.

Now, you're hungry. But it’s too cold for cereal, you don’t have the time for pancakes, and your usual eggs on toast just isn't cutting it… Introducing the super quick, super delish...

Berry Apple Jaffle, a 3 ingredient winner

Ingredients:

  1. Delicious-ness
  2. Nutritious-ness
  3. A three finger pinch of naughtiness.

But in all seriousness, this is a three ingredient affair that’s been a favourite of mine for a few years now. And the best part? You can make it in about 15 minutes. Bingo.

Let’s get straight to it. To make two jaffles worth, you’ll need an apple, about a cup of frozen berries and a sheet of puff pastry.

A jaffle machine is also handy. An air fryer or sandwich press could potentially do the trick? I've never tried it with either of these, but maybe you could be the first. Let us know results, hey.

Your optionals are cinnamon and nutmeg for the jaffle. And to spice up the final product? Icecream, Peanut butter or Nutella.

STEP 1: To begin, chop up your apple into 1cm square pieces. Just small enough so that the pieces can caramelize quickly.

STEP 2: Heat up a small pan to medium-heat, add some butter or oil, and add in the apple. After a few minutes, the apple should start to caramelize nicely.

STEP 3: Here’s when you add in the cinnamon and nutmeg if you have some handy. A few generous pinches of each should be plenty.

STEP 4: After a few minutes, add in your berries. Let the berries melt into the pan and simmer for a few minutes until the mixture is a nice consistency and the berries and apples are happily hanging out together.

I use frozen mixed berries because they aren't in season at the moment and are super exxy, but definitely go fresh if you can!

There is nothing more therapeutic to look at than simmering berries. Try it.

STEP 5: Next, take your puff pastry sheet and cut into quarters. It’s a two-slice job.

Make sure it's been out of the freezer for at least a minute or two so that it doesn't fracture.

STEP 6: Divide the berry/apple mixture in half and spoon each portion onto two of the four pastry squares.

STEP 7: Close the two sandwiches with the other two pastry squares.

Seal the deal.

STEP 8: Transfer the pastry pockets to the jaffle machine. This is sometimes a bit of an awkward process, but as long as the pastry remains relatively intact and you’re able to close the jaffle pan, you’ll be ok.

Closing the jaffle machine is always a bit awkward because everything gets squished and moved around inside, but trust the process!

STEP 9: In about 5 minutes, your jaffles will be ready. They will be golden and #crispy when ready.

STEP 10: Sort out your toppings and enjoy! I’ve opted for the simplicity of a coffee to accompany mine, but the world is your oyster in accompaniments land… Ice cream, Nutella, Peanut butter. Get creative.

Method

  1. Chop the apple into 1cm pieces.

  4. Add frozen berries to pan. Simmer for roughly 5 minutes.
  5. Cut put pastry into quarters.
  6. Divide apple/berry mixture into two and scoop onto two quarters of the pastry.
  7. Close the pockets with the other two pastry squares.
  8. Transfer to Jaffle machine and cook for about 5 minutes.
  9. Serve and enjoy!
