
Hello my Lovelies, by the time you read this I hope that you are happy and healthy and safe. This recipe is truly one of my loves due to the ingredients. That ingredient is the best ingredient in the world. I say this cause it really is one of my top favorites of all time. Let me talk to you about Seafood. It is the best ever and I could eat it 7 days a week. I dont want you to think seafood is expensive either. I know that some things can be but then again others can be just as easy as grabbing a rod and bait. I grew up in NJ and there is so much you can catch if your lucky enough to be a great fisherman. I am in no way a great fisherman or anything. I catch things by luck and I know this. The only things I know I have no control over catching is crabs or clams. Things like that its really about tide and bait in my opinion.
Now being of Latin decent I know that there are many different thing you can do to seafood to make it amazing. I mean just butter alone can make a huge difference. With this recipe I have combined the greatest things ever and that is seafood and bacon. I mean the seafood is obvious but bacon. Yummy is all I can say especially if the bacon is crispy and delicious. The only difference with this recipe is its wrapped scallops. Which ok, most people get frozen or previously frozen scallops. I like to go to the fish monger and see if they have fresh. Cause as we know fresh is always best. But there is exceptions when it comes to fish. Yes fresh is best but at times sometimes thats not possible. So I say this when its not possible to get fresh. Then you can go ahead and use frozen.
With scallops you want to make sure you get the bigger ones. That way its easy for you to wrap the bacon around it to cook. The bacon will also help with the moisture of the scallop and not allow it to dry out. So also make sure you dont cook it too long.
I love seafood and have said so many times. I have shared many of my personal recipes and will always do so. I think that seafood should be a main food that everyone should be able to consume every day. I dont think it should be as expensive as it is. I mean it comes out of our water which is right there. So like I said before if you live by the beach then you should be living a very sustainable life. You literally can just go to the beach and fish. I know during the winter its a bit harder to fish due to the cold. But there is truly always a way no matter what. Also if you soak a tooth pick to keep your bacon on the tooth pick wont burn if you choose to grill this rather to cook on the stove. Although grilling does make it that much more enjoyable. Due to the smoke flavor you will get off the grill. Its definitely a whole new flavoring to the dish. But I hope that you enjoy this and as always you may tweak this to your liking.
What you need:
8 Strips of bacon(I like to use maple bacon)
10 scallops, make sure they are dry
1 tsp of old bay
1/4 cup ketchup
1 tsp Cajun seasoning
1/4 cup of brown sugar
1/4 cup white vinegar
1/4 lemon juice
1 tsp of lemon zest
What to do:
Preheat oven to 425 degrees
Cut the bacon strips in half so you have 16 strips.
Take 1 piece and wrap around each scallop
You can use wooden or metal skewers to keep in place.
Place on baking sheet and sprinkle with your Cajun and old bay seasoning.
Bake for 15-20 mins til they are done.
Now making the sauce combine ketchup, vinegar, and brown sugar in saucepan.
Combine til sugar has dissolved.
*This is your dipping sauce.
