1. Chicken Parm Lasagna
Ingredients
for 10 servings
3 chicken breasts
salt, to taste
pepper, to taste
1 cup all-purpose flour
5 eggs, divided
2 cups italian bread crumbs
vegetable oil, for frying
2 cups ricotta cheese
24 oz marinara sauce
8 lasagna noodles
1 ½ cups shredded mozzarella cheese
1 ½ cups shredded parmesan cheese fresh basil,to garnish
-Cut chicken breasts in half (pound thin if necessary) and season with salt and pepper.
-Add the flour, 4 eggs, and bread crumbs to 3 separate shallow dishes. Beat the eggs. Coat the chicken in the flour, then the eggs, and finally in the bread crumbs.
-Heat the vegetable oil in a cast iron skillet over medium heat. Fry the chicken on both sides until golden brown, about 4 minutes on each side. Let drain on paper towels.
-In a medium bowl, combine the ricotta cheese and the remaining egg.
Preheat the oven to 350°F (180°C).
-Spread about ⅓ of the marinara sauce over the bottom of a casserole dish. Top with 4 lasagna noodles, ½ of the ricotta mixture, and 3 chicken cutlets. Sprinkle with ½ cup of mozzarella and ½ cup of Parmesan cheese. Repeat to make another layer, then finish with the remaining sauce and mozzarella and Parmesan cheeses.
-Cover with foil and bake for 45-60 minutes, uncovering the lasagna for the last 10 minutes of baking.
-Serve with a sprinkle of fresh basil.

2. Cheesy Chicken Alfredo Pasta
Ingredients
for 6 servings
1 tablespoon olive oil
3 chicken breasts, cubed
salt, to taste
pepper, to taste
4 cloves garlic, minced
2 ½ cups chicken broth
2 ½ cups heavy cream
1 cup penne pasta, uncooked
2 cups parmesan cheese
2 cups mozzarella cheese
1 handful fresh parsley, chopped
Preparation
-In a pot, heat oil and add chicken.
-Season chicken with salt and pepper.
-Add garlic, then brown the chicken.
-Add broth, heavy cream, and pasta, and bring to a boil.
-Cover and reduce the heat to a simmer for 15-20 min.
-Turn off heat and stir in 1 ½ cups (165 grams) of parmesan cheese.
-Pour half of the pasta into a greased 11×7 inch or 9×13 inch (28x18 cm or 33x23 cm) baking dish.
-Sprinkle evenly with 1 cup (115 grams) of mozzarella cheese.
-Layer the remaining half of the pasta evenly on top. Sprinkle evenly with 1 cup of mozzarella (115 grams) and ½ cup (55 grams) of parmesan.
-Broil 10 - 15 minutes, or until the cheese is golden brown. Remove and sprinkle with fresh parsley.

3. One Pot Lemon Garlic Shrimp Pasta
Ingredients
for 4 servings
8 oz linguine
2 tablespoons olive oil
8 tablespoons unsalted butter, 1 stick
4 cloves garlic, minced
1 teaspoon red pepper flakes
1 ¼ lb large shrimp
salt, to taste
pepper, to taste
1 teaspoon dried oregano
4 cups baby spinach
¼ cup parmesan cheese, grated
2 tablespoons fresh parsley, chopped
1 tablespoon lemon juice
Preparation
-In a large pot, boil water and add pasta. Cook (stirring frequently) until al dente.
-Drain and set pasta aside.
-In the same pan, heat olive oil and 2 tablespoons of butter. Add garlic and crushed red pepper, cook until fragrant.
-Toss in shrimp, salt and pepper to taste, and stir until shrimp start to turn pink, but are not fully cooked.
-Add oregano and spinach, cook until wilted.
-Return cooked pasta to the pot, add remaining butter, parmesan, and parsley. Stir until well mixed and the butter is melted.
-When the shrimp are cooked, add lemon juice, mix once more, then serve while hot.

4. Cajun Chicken Alfredo
Ingredients
for 4 servings
3 tablespoons olive oil
3 cloves garlic, chopped
1 cup cooked sausage, sliced
2 chicken breasts, thinly sliced
1 tablespoon cajun seasoning
2 cups heavy cream
4 cups penne pasta, cooked
1 cup parmesan cheese
¼ cup fresh parsley
Preparation
-Heat oil in a large pot over high heat. Cook the garlic, sausage, and chicken until garlic starts to brown and the chicken is no longer pink.
-Sprinkle over the Cajun seasoning and stir to evenly coat the sausage and chicken.
-Add the cream, and bring to a boil.
-Add the pasta, stirring until evenly mixed.
-To finish, add parmesan and parsley, stirring until cheese melts and pasta is coated with a thick sauce.
-Serve.
