My first double layer cake for niece

There are many people that don’t realize what people put into baking. The time that is put into creating each dessert to what people like or even making one to what we like. The outlines that need to be made to get that perfect design or if it’s just for fun we use our creativity and just wing it the rest of the way to make something absolutely beautiful. It’s also a lot harder than it looks and takes so much time to get the perfect type of icing and make up the right cake recipe to use. It started with my Papa when I was old enough to even think about cooking.

When I was really little I had a horrible thing with going into the kitchen to watch my Papa cook and bake. He was more into cooking really than he ever was into baking, but I loved all of his dessert and he always let me lick the spoon. I watched him for years in the kitchen until I took over and I swear the first time I tried to ice a cake was a disaster. The icing wouldn’t stick, the cake was falling apart and it looked like the cake would break any moment. I was a mess and I thought I was going to cry. My Papa came into the kitchen and saw me with just an apron and a spatula in tears with flour all over me and he just died. Not literally but I don’t think I saw him laugh that hard in years. He wiped my tears and told me that it didn’t matter what it looked like as long as it tasted good. He ate it either way and said it was delicious and ever since then I tried and tried to find a new recipe and kept up with baking since my Papa loved what I did.

When my Papa passed about four years ago it hit me really hard, I stopped baking and just fell apart. I was starting college when I finally started back up with baking and was asked to make some different cakes for family members birthday parties. It started with my nephew wanting a Scooby Doo cake for his birthday and I absolutely love that show no matter how old I am so I went for it. I got the pan shaped like it and made a new icing that worked really well and this cake turned out really good. I was so proud of myself and my family was too. They encouraged me to continue baking so I went on to bake cakes for parties. Now I have a new stand mixer that’s just waiting to be used.

Each Christmas my family member’s started to get me small baking items since I don’t have a whole lot and so far I have only baked for my family members. When I was young I wanted to open up a small bakery and see where it went but there is only so much a 22 year old can do. The baking though makes me so happy. It is great therapy for me and very soothing when decorating and seeing something so small become so great and reactions on someone’s face when they get that face is better than anything I have seen in my life.

Although when someone is in the kitchen then I have to kick them out because last time I let someone help me in the kitchen a whole bag of flour ended up in the cake batter. I refuse to let my cake become a mess like that again, even though we did have some good laughs after that happened, not from my mother though that was a major clean up party that took the dogs a long time to clean up. That’s why I put so much passion into baking, it may not be a major passion for others, but it really is something amazing that I cherish that has made me and others very happy and keeps my Papa alive in my heart as well.
