How to make Tiramisu.

Tiramisu is a coffee-flavoured Italian dessert. It is made of ladyfingers (savoiardi) dipped in coffee, layered with a whipped mixture of eggs, sugar, and mascarpone cheese, flavoured with cocoa. The recipe has been adapted into many varieties of cakes and other desserts. Its origins are often disputed among Italian regions Veneto and Friuli Venezia Giulia.

A symbol of Italian cuisine, tiramisu is a dessert loved by children and adults alike. Biscuits soaked in coffee, milk or fruit juice, a fluffy mascarpone cream, which can be flavored with amaretto, and a shower of cocoa are the few ingredients of this enticing dessert. Tiramisu is so popular that every year a World Cup is organized in Italy, to decide who prepares the best such dessert. I have prepared below some recipes and tricks for preparing a fragrant and tasty tiramisu.

1.Classic tiramisu recipe

Ingredient:

  • 250 g mascarpone
  • 3 eggs
  • 50 g powdered sugar
  • 1 glass of very cold coffee
  • amaretto or rom
  • 250 g biscuits
  • cocoa powder

Preparation: start by separating the egg whites from the yolks. In a bowl, beat the powdered sugar with the yolks until the mixture turns white. After mixing, add mascarpone and amaretto (rum) and mix until the cream becomes smooth. Beat the egg whites until stiff and gradually incorporate them into the cream, stirring with a spatula, from the bottom up. Refrigerate the cream for 30 minutes. Quickly soak the cookies in coffee and place them in a high-walled tray, forming the first layer of the cake. Cover with half of the mascarpone cream. Put a second and last layer of biscuits, over which you will put the rest of the mascarpone cream. Refrigerate the dish for at least 4 hours. Before serving, sprinkle tiramisu with bitter cocoa.

2.Original tiramisu

Ingredient:

  • 4 eggs
  • 500 g mascarpone
  • 4 tablespoons sugar
  • 300 g biscuits
  • 1 cup cold coffee
  • 50 g marsala (or any favorite liqueur)
  • bitter cocoa powder
  • Preparation: Half an hour before you start preparing this dessert, take the cheese and eggs out of the fridge. Separate the yolks from the whites. Beat the yolks with 1 tablespoon of sugar until they become frothy and turn white. Add mascarpone and mix quickly until the composition is smooth. Beat the egg whites until stiff with 2 tablespoons of sugar. Incorporate the egg whites into the cream cheese, stirring gently. Refrigerate the cream for half an hour. Mix the rest of the sugar and liqueur in the coffee. Assemble the tiramisu in a high-walled bowl: a row of biscuits soaked in cold coffee, a row of cream, then repeat the procedure. Leave the cake in the fridge for at least two hours, then serve it, powdered with cocoa.

    3.Tiramisu with mascarpone and pineapple

    Ingredient:

    • 400 g biscuits
    • 300 g mascarpone
    • 1 can of pineapple in syrup
    • 2 eggs
    • 70 g vanilla powdered sugar

    Preparation: Drain the pineapple slices from the syrup and cut them into cubes. Keep the liquid aside. Separate the egg whites from the yolks and beat the last ones with a whisk, together with the sugar, until they become frothy and white. Add mascarpone and homogenize the cream. Beat the egg whites until firm and lightly incorporate them into the cream cheese. Add the pineapple cubes. Assemble tiramisu from layers of biscuits soaked in pineapple syrup and mascarpone cream. Cover the tiramisu with cling film and refrigerate for at least 4 hours.

    Original ingredients

    Traditional tiramisu contains a short list of ingredients: ladyfingers (savoiardi), egg yolks, sugar, coffee, mascarpone cheese, and cocoa powder. A common variant involves soaking the savoiardi in alcohol, such as Marsala wine, amaretto or a coffee-based liqueur, but this is not mentioned in the original recipe.
