1 kg chicken, cut into pieces

3 cups basmati rice

2 onions, sliced

1 tomato, chopped

1 cup plain yogurt

1 teaspoon garam masala powder

1 teaspoon red chili powder

4-5 green cardamom pods

4-5 cloves

1 cinnamon stick

2 bay leaves

1 teaspoon saffron strands

1/2 cup milk

1/2 cup vegetable oil

Salt to taste

Fresh cilantro leaves for garnish

Instructions:

Rinse the basmati rice thoroughly in cold water and soak it in water for 30 minutes.

Heat the vegetable oil in a large pot over medium heat. Add the sliced onions and fry until they turn golden brown. Remove the onions and set them aside.

Add the chicken pieces to the same pot and fry them until they turn golden brown on all sides. Remove the chicken pieces and set them aside.

In the same pot, add the chopped tomatoes, ginger paste, and garlic paste. Cook for 2-3 minutes until the tomatoes are soft.

Cover the pot and cook on low heat for 15-20 minutes until the rice is fully cooked and the flavors have melded together.

Garnish with fresh cilantro leaves and serve hot with raita or your favorite side dish.
