Some nights in Doha seem to last longer than they should. The air feels heavy, the streets get quiet, and your mind starts drifting toward the small comforts you’ve been putting off all day. I had just finished a long shift — one of those days that takes more out of you than you expect — and even though it was late, my stomach wasn’t ready to call it a night. I wanted something warm and familiar, something that felt like home on a plate.
