
Pineapple Ice Cream
Ingredients
For Pineapple Ice Cream
2 1/2 cups full fat milk
1 tablespoon cornflour
5 tablespoons sugar
1/2 cup fresh cream
A few drops of pineapple essence
1/2 cup chopped candied pineapple
Procedure
To make Pineapple Ice Cream
Combine cornflour and 1/2 cup milk in a bowl, mix well and keep aside.
In a deep non-stick pan, combine remaining 2 cups milk and sugar, mix well and cook on medium heat for 5 minutes.
Add cornflour-milk mixture, mix well and cook on medium heat for 4 minutes, stirring occasionally.
Allow the mixture to cool completely. Once cooled, add fresh cream and pineapple essence and mix well.
Pour the mixture into a shallow aluminium container. Cover with aluminum foil and refrigerate for 6 hours or until slightly frozen.
Put the mixture in a mixer and blend until smooth.
Now pour the mixture back into the same shallow aluminum container, cover with aluminum foil and refrigerate for 10 hours or until completely frozen and ice cream-like.
Scoop the pineapple ice cream and serve immediately.
