Ingredients:
1 ½ cups (190g) all-purpose flour
1 ½ tsp baking powder
¼ tsp salt
½ cup (115g) unsalted butter, softened
1 cup (200g) granulated sugar
2 large eggs
2 tsp pure vanilla extract
½ cup (120ml) whole milk
Instructions:
Preheat the oven to 350°F (175°C) and grease two 8-inch round cake pans. Line the bottoms with parchment paper for easier removal.
Mix dry ingredients:
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
Cream butter and sugar:
In a large bowl, use a hand mixer (or stand mixer) to cream the softened butter and sugar together on medium speed until light and fluffy (about 2-3 minutes).
Add eggs and vanilla:
Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next.
Mix in the vanilla extract.
Alternate adding dry ingredients and milk:
On low speed, add half of the dry ingredients to the butter mixture, mixing until just combined.
Add the milk, then the remaining dry ingredients, and mix until smooth. Be careful not to overmix.
Pour batter into pans:
Evenly divide the batter between the prepared pans and smooth the tops with a spatula.
Bake:
Bake for 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean.
Let the cakes cool in the pans for 10 minutes, then remove from pans and let them cool completely on a wire rack.
Frost and decorate:
Once the cakes have cooled, frost them with your favorite frosting. Classic buttercream or cream cheese frosting works perfectly with vanilla cake.
Simple Buttercream Frosting:
1 cup (230g) unsalted butter, softened
4 cups (500g) powdered sugar
2 tsp vanilla extract
2-3 tbsp milk or heavy cream
Beat the butter on high speed until creamy.
Gradually add powdered sugar, alternating with vanilla and milk until smooth and fluffy.
Adjust consistency with more milk (if too thick) or powdered sugar (if too thin).
