Iskender Kebab

Iskender Kebab is one of Turkey’s most beloved dishes, holding a deep cultural and historical significance. Originating from Bursa in the 19th century, this dish was created by İskender Efendi, who revolutionized the way meat was cooked and served. Today, Iskender Kebab remains a symbol of Turkish culinary excellence, embodying both tradition and innovation.

The Story Behind Iskender Kebab

The roots of Iskender Kebab trace back to the Ottoman era, when culinary advancements were flourishing. İskender Efendi introduced a new method of vertically roasting lamb on a rotisserie, allowing the fat to baste the meat as it cooked. The tender, thinly sliced meat was then placed over pieces of pide bread, generously drizzled with rich tomato sauce, and topped with melted butter. A side of creamy yogurt and grilled vegetables completed the dish.

This dish gained immense popularity due to its unique combination of textures and flavors. Over time, it became a staple in Turkish restaurants, symbolizing the fusion of Ottoman and Anatolian culinary traditions. Even today, visiting Bursa and enjoying an authentic Iskender Kebab is a pilgrimage for food lovers across the world.

Traditional Iskender Kebab Recipe

Ingredients:

500g lamb or beef, thinly sliced

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon red pepper flakes

2 tablespoons olive oil

4 pieces of Turkish pide bread, cut into squares

2 tablespoons butter

1 cup tomato puree

1 teaspoon sugar

1/2 teaspoon salt (for sauce)

1 cup plain yogurt

1 green pepper and 1 tomato (grilled, for serving)

Instructions:

Marinate the Meat: Season the thinly sliced lamb or beef with salt, black pepper, red pepper flakes, and olive oil. Let it marinate for at least an hour.

Prepare the Sauce: In a pan, melt 1 tablespoon of butter, add the tomato puree, sugar, and salt. Let it simmer for 10 minutes until thickened.

Cook the Meat: In a hot pan or grill, cook the marinated meat slices until they are browned and tender.

Assemble the Dish: Place the pieces of pide bread on a serving plate. Arrange the cooked meat over the bread, then pour the tomato sauce generously over the top.

Final Touch: Melt the remaining butter and drizzle it over the dish. Serve with a side of yogurt, grilled green pepper, and grilled tomato.
