Greenpeace Pulao with Paneer Kofta

components

For the green pea pulao

3 cups of cooked basmati rice

3/4 cup boiled green peas

2 pinches of saffron

1 tsp milk

1 tablespoon ghee

1/2 tsp Shahjeera

50 millimeter (2”) piece of cinnamon

2 cloves

2 cardamoms

Salt, to taste

8 to 10 dried apricots, soaked in water for 1 hour, filtered and cut into pieces

For the cheese kofta

1 cup grated paneer

3 tablespoons of fenugreek

1 pinch of baking soda

2 tablespoons finely chopped coriander

2 tbsp finely chopped green chillies

Salt, to taste

Oil, for frying

For the gravy

1 tablespoon ghee

3/4 cup fresh curd, diluted in 1/2 cup water

1/2 tsp sugar

Salt, to taste

Grind to prepare a smooth paste (for gravy) to obtain required water

1/2 cup large chopped onions

3 tablespoons of freshly grated coconut

4 cloves of garlic

2 tsp whole coriander

1 tsp cumin seeds

50 millimeter (2”) piece of cinnamon

3 cloves

3 cardamoms

2 tsp poppy seeds

7 whole red Kashmiri chillies, chopped

Other essentials

2 tsp ghee, for spreading

2 tsp milk

For green pea pulao

Heat the saffron in a small pot, get the milk in it and grind the saffron, mix well.

Mix the saffron-milk mixture and rice well in a bowl and keep aside.

In an open non-stick pan, heat oil in a ghee hot kadai, add koftas little by little and fry them until golden brown on each side, then dry them on a tissue paper and keep aside.

For the gravy

Heat ghee in an open non-stick pan, add the prepared paste and saute on medium heat for 3 to 4 minutes, stirring occasionally.

Then add curd-water mixture, sugar and salt and cook on low heat for 1 to 2 minutes, stirring occasionally, keep it aside.

Next way

Take the green pea pulao and kofta in a bowl and mix it lightly.

Divide 2 equal portions of this mixture and keep aside.

Heat ghee in a baking bowl, add 1 part of the green pea pulao-kofta and spread it evenly with the back of a spoon.

After that pour all the prepared gravy evenly over it.

Finally spread the remaining portion of green pea pulao over it and pour milk evenly over it.

Cover the dish and bake in a preheated oven at 1800 c (3600 f) for 15 to 20 minutes or in the microwave on high for 5 to 7 minutes.

Before serving, invert it into a serving dish and serve immediately.
