Many of us only think of Gujarat when we think about dhokla, khakra, or the mouthwatering Gujarati Thali. Gujarati cuisine is more complex than that, though. Four important regions of Gujarat—North Gujarat, Kacch, Kathiyawad, and Surti Gujarat—each contribute something distinctive to Gujarati food.
1 Khaman

It is fundamentally the same as its little cousin, the well-known?dhokla?, and is a delicious and healthy steaming snack made with crisply ground lentils and chickpea flour. The khaman is prepared by bubbling the khaman flour mixture with turmeric, salt, and cooking pop to make it light and soft. After that, it is divided into blocks and typically adorned with sev, chopped onions, mustard seeds, and coriander leaves. The modern, urban version is offered with daily newspapers in farsan (nibble) shops with tart chutneys and a few pieces of green chilli. It is typically served on a large green leaf known as the Kesuda. The Ameri khaman (pounded khaman adorned with sev and pomegranate), Nylon khaman (milder and rapid cooking khaman), and Masala khaman are common variations of the khaman (khaman presented with hot and zesty nippy powder)
2. Thepla

Without this ubiquitous nibble, no Gujarati adventure, picnic, outdoor hike, or even work travel is complete. These flatbreads, which are made with crisp fenugreek leaves, whole wheat flour, gramme flour, and other ingredients, are healthy snack options with a lengthy shelf life. They make nutritious dinners and are typically served sizzling with new curd, pickles, or chundo. They also make a deluxe breakfast or a great snack during a downpour when combined with some steaming hot tea. Although the methi (fenugreek) varieties are the most well-known, other varieties include palak (spinach), amaranth, or muli (raddish) theplas—each specially recommended for distinct diners.
3. Khandvi

Khandvi is made up of thin layers of gramme flour that have been cooked with buttermilk and pushed up into soft sweetness along with a few different ingredients like sesame seeds that have been sautéed. It is essentially compelling due to the simple but fragrant garnishing of curry leaves, coriander, sautéed cumin, mustard, and coconut. Both Gujaratis and Maharashtrians are familiar with this snack, which is also known as "suralichya wadya" in Maharashtra. Everyone loves this meal, but none can deny that it can be tricky to prepare, especially when it comes to getting the player consistency just perfect. Khandvi is a delicious snack that is light on the stomach and gratifying on the tongue. It is perfect for breakfast or a delicious after-dinner treat.
4. Undhiyu

The reason a Gujarati looks forward to winter so eagerly is because of Undhiyu, the king of Gujarati foods, as well as Uttarayan, of course. It is a traditional Gujarati dish prepared in a reversed earth pot and gets its name from the Gujarati word "undhu," which means "rearranged." It is a distinctive winter treat made with the best fresh food that is readily available in the winter. Basic ingredients include eggplant, crispy muthiyas (dumplings made of chickpea flour that are grilled), potatoes, yam, green peas, bananas, and beans that are perfectly prepared with buttermilk, coconut, and spices. The presentation of undhiyu with puris and shrikhand is a tradition during Gujarati weddings.

It is my goal to mention only a few of the foods that this culinary state is famous for. The following meals, among others, deserve a good specify: patra, dabeli, doodhpak, dal dhokli, bajri no rotlo, locho, sev usal, and dahi tikhari. Gujarat is in fact a foodie's paradise, and as the recipes mentioned above demonstrate, there is something in this flavor-packed cookery for everyone. As of right now, can we see you dribbling?
