When planning a road trip or weekend away, packing the right snacks can make a big difference.

It can be tempting to pack unhealthy crisps or candy bars, however, looking at healthier options like these homemade crunchy oat biscuits can work out more cost effective.

I have a sweet tooth, and these biscuits helps to satisfy my sweet tooth cravings. It’s more nutritious, wholesome and filling than the conventional snacks.

It also gives me that feel good feeling once I just smell it and start eating it. It gives me that sense of comfort even when I’m away from my familiar surroundings.

Its long-lasting freshness compared to other types of perishables is ideal for those long road trips or that weekend away.

I simply love these homemade biscuits. I have been baking these biscuits for the last 30 years.

It has become our go to biscuits in my home as well as for our road trips. It is easy to put together and goes extremely well with a cup of tea or coffee. Or even just on its own.

Freshly Baked Crunchies

Recipe: How to Make Your Own Crunchy Oat Biscuits

Ingredients:

Half cup rolled oats

1 and a half cups all-purpose flour

1/2 cup brown sugar

1/2 cup desiccated coconut

250 grams butter, melted

1/4 cup golden syrup or honey

1 and a half tsp baking powder

1/2 tsp salt

3 tsp cocoa powder (optional)

Method:

Preheat your oven to 356°F (180°C).

In a large bowl, combine all the dry ingredients. The rolled oats, all-purpose flour, baking powder, cocoa powder and salt. Mix well to ensure all ingredients are evenly distributed.

In a separate bowl mix the melted butter, sugar, golden syrup (or honey). Stir until well combined.

Combine the dry ingredients to the melted butter mixture and mix thoroughly.

The mixture will be like a soft dough. Add optional ingredients if desired. You can add chopped nuts, raisins, or chocolate chips.

Using a tablespoon, scoop out the dough and press it down onto a baking tray.

Before placing in oven cut into squares in the baking tray. I recommend doing this as it is easier to cut into squares before baking in order to avoid breakage of biscuits.

Bake: Place the baking tray in the preheated oven and bake for 30–35 minutes, or until the biscuits are golden brown.

Remove the biscuits from the oven and let them cool on the baking tray for a few minutes before transferring them to a wire rack to cool completely.

Once cooled, your Crunchie Oat Biscuits are ready to enjoy. Store any leftovers in an airtight container to keep them fresh.
