The Earl, his wife and the subaltern

John Montagu, Fourth Earl Sandwich, had little appetite for the proffered sirloin. He recalled his indulgence in the ‘French game’ the previous night. They were joined by a young subaltern of the Third Lancers.
"We have a saddle of mutton your lordship might care to try? Spit roast pork?"
For some strange reason, the thought of a plump pig roasting on a spit reminded him of how his young wife had positively squealed with delight at the height of the night's antics.
"Bring me a generous portion of pork, Jenkins. And with just a hunk of bread on either side.”

I guess we now know who the submissive was in the evening's frivolity. But who was the dominant? I'm counting it was the wife inasmuch as the husband came earl-y & was rendered a mere observer to the rest.
Extra sauce on this one, especially with the references to pork!
