1 1/2 cups Arborio rice

1 cup dry champagne

4 cups chicken or vegetable broth, kept warm

1/2 cup grated Parmesan cheese

1/4 cup unsalted butter

1 small onion, finely chopped

2 cloves garlic, minced

Salt and pepper to taste

For the Pan-Seared Scallops:

12 large sea scallops

2 tablespoons olive oil

Salt and pepper to taste

Instructions:

Champagne Risotto:

In a large pan, sauté onions and garlic in butter until softened.

Add Arborio rice and cook, stirring, until the rice is lightly toasted.

Pour in champagne and cook until almost evaporated.

Begin adding warm broth, one ladle at a time, stirring frequently. Allow the liquid to be absorbed before adding more.

Pan-Seared Scallops:

Pat dry scallops and season with salt and pepper.

Heat olive oil in a skillet over medium-high heat.

Sear scallops for 2-3 minutes on each side until golden brown and cooked through.
