How to make beef and onion stir fry

6.7 oz/190 g onion
4 stalks of green onion
1/4 tsp salt
1/4 tsp sugar
4 cloves of garlic
16.9 oz/480 g beef
2 tsp soy sauce
2 1/4 tsp dark soy sauce
3/4 tsp oyster sauce
3/4 tsp sugar
1 1/2 tsp baking soda
4 1/2 tsp corn starch
3 tsp oil
1 1/2 tsp sesame oil
3 tbsp oil for cooking
3 tsp dark soy sauce
1 1/2 tsp oyster sauce
1/3 cup water

Step 1: Gather Your Ingredients
To begin, we need to prepare our ingredients. Start by taking four green onions and cutting them into two-inch sections, making sure to separate the white and green parts. The whites and greens will be used at different stages of cooking. We also need to finely mince four cloves of garlic and cut one onion into large strips. Now, let's talk about the star of the show - the beef. You can use almost any cut; just make sure to slice it against the grain into your preferred thickness.
Step 2: Marinating the Beef
Next, it's time to marinate the beef. In a mixing bowl, combine two teaspoons of soy sauce, two and a quarter teaspoons of dark soy sauce, three-quarters of a teaspoon of oyster sauce, three-quarters of a teaspoon of sugar, one and a half teaspoons of baking soda, and four and a half teaspoons of cornstarch. Mix these seasonings well and add three teaspoons of oil and one and a half teaspoons of sesame oil. Remember, add the oil after you've thoroughly mixed the seasonings into the beef.
Step 3: Let's Get Cooking
You don't have to wait for the beef to marinate, so let's fire up the stove. Preheat your pan over medium-high heat and add a bit of oil. Once it's hot, toss in the white part of the green onions and the onion strips. We're going to stir-fry them just enough to remove the raw spiciness. Sprinkle in a pinch of sugar and salt, but be careful not to overcook them. We want those onions to stay crunchy. Once they're ready, transfer them from the pan to a plate.
Step 4: Cook the Beef
Now, it's time for the star of the dish - the beef. Add a little more oil to the hot pan, spread out the sliced beef, and let it pan-fry until the bottom is slightly brown. After that, give it a gentle stir and add the minced garlic we prepared earlier. Keep stir-frying until the beef is about 70% cooked, add a bit more dark soy sauce and oyster sauce, and mix everything well. Add some water (no need for a starchy water mixture if you've added cornstarch during the marination), and you'll see the sauce thickening up. Finish it off with some crushed black pepper, and toss those cooked onions back into the pan for the grand finale.
