- For 4 servings, you'll need:
4 slices of ginger
9.87 oz ( 280 gram ) broccoli
1/8 tsp sugar
1/8 tsp salt
1/3 cup water
4 cloves of garlic
11.64 oz ( 330 gram ) chicken breast
1 1/2 tsp soy sauce
1 1/2 tsp oyster sauce
1 tsp sugar
1 tsp baking soda
1/8 tsp white pepper powder
4 tsp cornstarch
4 tsp water
4 tsp oil
1/3 cup water
1 1/2 tsp dark soy sauce
1 1/2 tsp oyster sauce
1/2 tsp sugar
Additionally, you'll need 4 tbsp of oil for cooking.
To start, I finely minced four cloves of garlic and sliced four pieces of fresh ginger. I've got two small broccoli crowns, which I've cut into bite-sized pieces. As for the chicken, I've chosen one skinless chicken breast, but two skinless chicken thighs work just as well. I've cut them into slices.
Next, it's time to marinate the chicken. I've mixed it with a blend of soy sauce, oyster sauce, a touch of sugar, a bit of baking soda, and some white pepper. After thoroughly coating the chicken, I've added a mixture of cornstarch and water, along with a bit of oil.
Before we dive into the cooking, I prefer to prepare the seasonings we'll need in advance, although you can add them as you cook if you like. I've preheated the pan over medium-high heat and added some oil. I've tossed in the ginger slices to infuse the oil with their flavor. Then, it's time to add the broccoli, quickly followed by a bit of sugar and salt.
Once the sugar and salt dissolve, I've added rice wine directly to the hot pan's surface, giving the broccoli a brief steam. After 30 seconds, I've removed the broccoli from the pan. I've added a touch more oil to the still-hot pan and carefully placed the chicken slices. They sizzle and pan-fry until they turn a beautiful golden hue.
Once the chicken is golden, I've added the minced garlic and started stir-frying the chicken. I've sprinkled a bit more rice wine over the chicken, stir-frying until the wine evaporates. Then, it's time to introduce the seasoning sauce I prepared earlier, stirring until the color is consistent.
To create a thick and savory sauce, I've added water. Thanks to the cornstarch we incorporated into the chicken earlier, the water quickly thickens up into a delectable sauce.
Now, it's time to turn off the heat and reintroduce the broccoli to the pan. Remember, it's essential to turn off the heat before adding the broccoli. I've quickly tossed the chicken and broccoli together, and we're ready to enjoy this delicious dish.
