To make Kofta:
100 grams of cheese
50 grams of mola
2 tablespoons bread crumbs or cornflour
1 tablespoon of cashew nut powder
2 green chillies finely chopped
2 teaspoons finely chopped coriander
A spoonful of garam masala
Pinch of pepper powder
Salt to taste
Oil for frying
To make the gravy:
1 tablespoon of oil
3 cloves
2 pieces of cinnamon
1 bay leaf
2 tbsp cashew nuts
2 spoons of brains B
7-8 soaked almonds
1 teaspoon of dry coriander
1/2 teaspoon cumin
1 cardamom
2 large tomatoes
To enhance the gravy:
2 tablespoons of butter
1 tablespoon of oil
Prepared puree
1 tsp kitchen king masala
1/2 teaspoon red chili powder
1/4 teaspoon turmeric powder
1 teaspoon Kasuri fenugreek
1 tablespoon curd mash
1 tbsp fresh cream
Salt to taste
Charcoal and 1 tsp ghee to give a smoky flavor
Cooking Instructions

Take all the ingredients for the kofta in a bowl and knead everything well by hand to prepare a very smooth mixture, so that the kofta becomes very soft inside.
Fry the kofta in hot oil on medium heat so that it does not get golden color. On the other hand, leave the coals to heat.
To make the gravy:
First put 1 teaspoon of oil and add all the khada masala, cashew nuts and seeds of saffron and roast everything on low heat for two to three minutes, then add tomato and cook until the tomato becomes soft. Now when this mixture cools down, add soaked almonds to it and prepare its puree in a mixer jar.
Heat the oil and butter, add the prepared puree and cook it on low heat for 4 to 5 minutes. Now add curd musco and fresh cream to it and mix well and cook for two minutes. Take a piece of chilli and put heated charcoal in it, sprinkle kasoori methi around it and pour ghee over the charcoal, close the lid tightly and leave it for 15 minutes.
Take the prepared kofta in a serving dish and add the prepared gravy on top, garnish with fresh cream, coriander and grated cheese and paneer.
So ready to serve nawabi kofta curry the kofta is crispy on the outside and very soft and smooth on the inside also its gravy is very smooth here I have served nawabi kofta with roti, pulao, chaas etc.
