Mex Burrito Meal

Ingredients: -

2 brown or yellow onions

2 bell peppers or capsicums (green)

2 avocados

Half a lime

Sea salt flakes

Black pepper

2 baby cars or Romaine lettuces

150 grams of mozzarella cheese

2 teaspoons of oil

1.5 grams of ground cumin

1.5 grams of smoked paprika

500 grams of turkey mince (can use beef, chicken, or pork)

2.5 grams of sweet paprika

2.5 grams of chili powder

200 grams of salsa

5 tortillas

Black beans (drained and rinsed)

Instructions: -

1-Slice two brown or yellow onions in half, remove skins, slice in half moon position into thin or medium sized strips

2-Slice two bell peppers or capsicums in half, remove core and seeds, thinly slice into same size as onion

3-Slice two ripe avocados around seed, remove seed, scoop out with spoon, add juice of half a lime and sea salt flakes to taste, mash with fork or masher to desired consistency, refrigerate until ready to serve

4-Shred two baby cars or Romaine lettuces into thin strips

5-Grate 150 grams of mozzarella cheese

6-Place large pan over medium-high heat, add two teaspoons of oil, add onions and bell peppers, season with sea salt flakes and cracked black pepper, sauté for 5–6 minutes until golden brown and soft but still has a little bit of a bite

7-Add 1.5 grams of ground cumin and smoked paprika, mix and cook for 1 minute

8-Place same pan over medium-high heat, add three teaspoons of oil, add 500 grams of turkey mince, season with salt, let sit for 2 minutes to form crust, then mix and break up, cook for 7–8 minutes until completely cooked through

9-Add 7 grams of ground cumin, 2.5 grams of sweet paprika, 2.5 grams of chili powder, and 200 grams of salsa, mix and cook for 2 minutes until reduced and coating everything well

10-Place filling on tortillas, including avocado, black beans, vegetable fajita mix, turkey mix, chiffonated lettuce, and grated mozzarella cheese

11-Wrap tortillas by folding in sides, bringing bottom over top and tucking in with fingers, making sure sides are completely tucked in, then rolling completely over

12-Toast burritos in pan over medium-high heat with spray oil or light drizzle of oil for 1.5 minutes on each side until golden brown and crispy

13-Serve and enjoy!
