Sulfite in Processed Food Can be Fatal
I learned it the hard way

Rows and columns
of delicious showcases
in transparent boxes.
They are delicious,
no wonder —
but are safe?
I'm not sure.
In fact, I know —
they are not.
What do I mean?
Nuts and dry fruits
are good for health —
we’ve all heard that,
yes!
When you got them locally,
when we preserved them
by sun-drying —
But now?
The food chain
is hijacked by chemicals.
Preservatives are invisible —
but the immune system
can sense it all.
If it were not robust,
the human species
wouldn’t have survived.
What’s the evidence
that the processed foods
are risky, you ask?
Well, I ate the nut mix
for a month,
with much love.
But then —
I got skin itching, hives,
lip swelling, puffy eyes,
breathing issues too.
I went to the doctor —
he was clueless.
Suggested I check with
a hormone specialist.
But I don’t like
the rabbit hole
of modern medicine.
I pondered —
what went wrong
in my lifestyle?
I suspected
the processed tree nuts
were the culprits —
with their sulfites,
a dangerous allergen
for sensitive people.
I am vulnerable.
I discarded the nuts.
It took months
to get my health back.
If I had not,
anaphylaxis
could have been fatal.
Now,
I eat raw almonds —
soaked overnight.
Chemicals are stealthy.
Educate yourself.
Find your offenders.
And live healthy.

Nowadays nothing is safe to consume unless we grow it ourselves. Loved your poem!
