
The giant Thanksgiving pumpkin
sat in the garage,
as we waited for school holidays,
to cut it, and process for snacks.
We took the pumpkin to the backyard,
I cut it open,
the kids scooped out the seeds,
scraped the slimy threads,
helped wash and dry the seeds,
spreading them on a tray in a thin layer.
After a few hours,
I skillet-fried them on low heat,
sprinkling with oil and salt.
I fed the kids,
telling it has magnesium,
nutritious green nut like pistachio.
We are happy that
we did not carve the pumpkin
to waste it turning moldy.
We saved the seeds,
to make our healthy snack.
Guess what else?
I kept some pumpkin flesh to cook,
kids used cookie cutters to make shapes,
with some thin slices,
and I boiled the rest to make soup
for the backyard plants,
as I want to close the loop,
what comes from the earth
should go back to it.
