White chocolate isn't actually chocolate as it's made primarily from milk. Instead of cocoa solids, it often contains palm oil or other fillers and lots of sweeteners. Cocoa butter gives white chocolate a creamy texture and color. So who made this white ribbon first? It was like Nestlé. The company began commercial production of new cargo in Switzerland in 1936. The story goes that they were originally made to use supplemental milk powder made during the First World War. By the end of the war they were no longer in demand, so making new white ribbons was a way to use up the surplus. It also uses cocoa butter, which is extracted from cocoa beans, to make cocoa powder. Cocoa butter is not only used to make white chocolate but is also found in cosmetics and medicines.

The price of cocoa butter skyrocketed between 2005 and 2015, prompting many chocolate makers to limit consumption and add fillers such as vegetable oils to their chocolate.

The makers of these white bars made from our favorite dessert are experimenting with new flavors. These include flavors with turmeric, pomegranate, mango, chili, lemon, rosemary, sea salt and even Thai curry. White chocolate can now be made from both plant-based and goat's milk. You can also make premium chocolate with lemon oil and lemon salt. A German producer adds beets and mustard and combines it with broccoli and Sicilian almonds. Other growers add blueberries, strawberries and raspberries. These types of candies improve their whiteness. You can even buy black sesame, vanilla, and macha flavored strips, but they're gray, not white. Other ingredients are saffron (a combination of oriental spices), sweet oranges and pistachios.

If your chocolate bar is pure white, it has turned white (cocoa butter is yellow, not white) and is likely toasted. Read the label before buying. It's recommended to buy ingredient bars that contain only cocoa butter, sugar, powdered milk, milk solids, and possibly vanilla and lecithin. Of course, it's best to buy your bar from a chocolate shop or artisan or specialty store.
