A Full Day of Delicious Recipes: From Breakfast to Dinner in My Kitchen
Breakfast: Spicy Chili Oil Avocado Toast
Start your day with a burst of flavor and energy with a simple yet flavorful breakfast – Chili Oil Avocado Toast. It’s a dish that’s quick to prepare and packed with all the right nutrients to fuel your morning. Here’s how I prepared it:
I start by heating a spoonful of homemade chili oil in a pan. The chili oil is something I made a couple of days earlier, and it’s full of rich, spicy flavors. I use the oil with chili bits for that extra zing. Once the oil is hot, I crack an egg into the pan, opting for just the egg white. If you like a more indulgent breakfast, feel free to add the whole egg instead. I let it cook gently, making sure it’s perfectly done without overcooking.
While the egg is cooking, I prepare the avocado. I mash one ripe avocado and mix it with a pinch of salt, a squeeze of lemon juice, some pickled gallop for an extra tangy punch, and a sprinkle of black pepper. This simple mixture adds a creamy and refreshing base to the toast. I toast a slice of bread until it's golden and crispy, then spread the avocado mixture generously over the top.
Once the egg is cooked to my liking, I place it on top of the avocado toast. For a final touch, I drizzle a little more chili oil to enhance the flavor. The combination of the creamy avocado, crispy toast, and the spicy kick from the chili oil makes for a satisfying and energizing breakfast that’s ready in just a few minutes.
Lunch: Chicken Mauba with Chickpea Salad
For lunch, I prepare Chicken Mauba – a Palestinian dish that’s both hearty and flavorful, paired with a crisp chickpea salad to balance out the richness. This meal brings together layers of flavors that are sure to make everyone at the table happy.
Chickpea Salad
I start by preparing the salad, which is filled with fresh ingredients like fried brinjal (eggplant), chickpeas, shredded carrots, lettuce, and onions. Although I usually include olives, I didn’t have any this time, so I made do with the ingredients at hand. To make the dressing, I mix olive oil, pomegranate molasses, lemon juice, and mashed garlic. This dressing gives the salad a tangy yet savory flavor. The key to a fresh salad is to add the dressing just before serving so the veggies stay crisp and don’t get soggy.
Chicken Mauba
The next part is making the Chicken Mauba, a dish that has a lot of comforting flavors. I begin by deep-frying sliced brinjal and potatoes until they’re crispy. These fried vegetables form the base of the dish. Next, I heat oil in a pan and sauté onions until they turn golden brown. I add ginger-garlic paste and cook for a minute before adding tomatoes and tomato paste, cooking until they become soft.
The next step is to add chicken pieces into the mix, cooking them with the spiced tomato sauce. To make the chicken flavorful, I add a special spice mix called Bharat, which is a blend of cumin, coriander, paprika, black pepper, cloves, cardamom, and nutmeg. These spices create a deep, aromatic flavor that defines the dish. I also add garlic powder and extra black pepper for a more intense taste. After 20 minutes of simmering, the chicken is tender and fully absorbed in the spices.
Finally, I assemble the dish by layering the fried vegetables at the bottom of a pan, followed by the chicken masala. I top it with cooked basmati rice, then drizzle saffron-soaked water over the rice to infuse a rich fragrance. After covering the pan with foil, I cook it on low heat for 45 minutes. The result is a flavorful, fragrant mauba that everyone loves!
Evening Snack: Carrot POA (Carrot Halwa-Style Pudding)
Though I don’t always make snacks, today I decided to make Carrot POA, a delicious evening treat that’s inspired by the traditional carrot halwa. This snack is perfect for satisfying a sweet tooth and makes for a great kids’ lunch box option too.
To make the Carrot POA, I start by grating two fresh carrots. I then sauté them in ghee and sugar, cooking them on low heat until the carrots are tender. In the meantime, I blend four eggs with sugar, milk powder, and cardamom powder until smooth. The addition of milk powder gives this dish a rich, creamy texture.
Once the carrots are cooked, I take one-third of them and blend it with the egg mixture to form a smooth paste. I then heat ghee in a pan, toast cashew nuts until golden, and set them aside. I pour the egg-carrot mixture into the pan and top it with the remaining cooked carrots and cashews. After covering the pan, I let it cook on low heat until the pudding firms up and is no longer jiggly. The final result tastes remarkably like carrot halwa but without the strong egg flavor. It’s a sweet, creamy treat that’s perfect for dessert or a quick snack.
Dinner: Basin (Gram Flour) Dosa with Coconut Chutney
For dinner, I opted for a simple yet delicious dish – Basin (Gram Flour) Dosa paired with coconut chutney. This is a light, crispy meal that’s easy to prepare and satisfies hunger without feeling too heavy.
To make the dosa batter, I combine gram flour (basin), semolina, rice flour, turmeric, and salt in a blender. I add enough water to make a smooth batter that’s thin enough to spread easily in the pan. Once the batter is ready, I heat a pan and add some ghee. I pour the batter into the pan and spread it thin, allowing it to cook on one side until crispy. After flipping, I drizzle more ghee on top for an extra crispy texture. My kids love their dosas extra crispy, so I make sure they get that perfect crunch.
I serve the dosa with a side of coconut chutney, which I prepare by blending fresh coconut, green chilies, and a bit of mustard. This chutney is the perfect accompaniment to the crispy dosa and adds a tangy, creamy element to the meal.
