Chifa is a delightful fusion of Peruvian and Chinese culinary traditions, representing the vibrant multicultural landscape of Peru. With a rich history and a variety of mouthwatering dishes, chifa has become an essential part of Peruvian culture and gastronomy. The neighborhood I have stayed in has a Chifa place on every corner and several in between.

History of Chifa

Chifa emerged in Peru during the late 19th century when Chinese immigrants, mainly Cantonese, arrived in the country. They were brought in to help address labor shortages, particularly in agricultural and mining sectors. As they settled, these immigrants began to adapt their traditional cooking methods and recipes to incorporate local Peruvian ingredients and flavors.

Over the years, the Chinese immigrants opened small eateries that served their homeland's dishes. These restaurants were known as "chifas," a term derived from the Cantonese word "chi fan," which means "to eat rice." Initially, chifa cuisine was primarily enjoyed by the Chinese community and a few locals curious about the new flavors.

As time went on, chifa became popular throughout Peru, transcending cultural and racial boundaries.
