Two recipes for delicious cookies

Cookies "Dandelion" and "Truffle" on boiled yolks

Hello, friends!

Today I will share with you two recipes of unusual, very tasty, tender, airy cookies "Dandelions" and "Truffles". Its unusualness is that for the dough we will use not raw eggs, but boiled yolks. But believe me, this only improves the taste of the cookies.

For the "Dandelions" cookies we will need the following ingredients.

Dough:

- 3 boiled yolks

- 1 tbsp. sugar

- 120 g sour cream

- 80 g butter

~ 210 g flour

- 1 tsp. baking powder

- a pinch of salt, vanilla and turmeric (optional)

Glaze:

- 30 ml milk

- 30 g butter

- 70 g sugar

Topping:

- 40 g corn sticks

- 20 g coconut flakes

This amount of ingredients makes about 18 cookies (~550g).

PREPARATION

Step 1. First, let's make the dough. Place 3 boiled yolks in a bowl, add sugar and softened butter. Mix everything well with a fork or silicone spatula until smooth.

Step 2. Add sour cream and mix everything well. You should get a smooth creamy mass.

Step 3. Add a little sifted flour and baking powder, as well as a pinch of salt, vanilla and turmeric. Mix everything thoroughly.

Step 4. Gradually add the remaining flour, knead a soft dough that does not stick to your hands. You may need a little more or a little less flour than indicated in the recipe. This depends on the flour itself, and on the fat content and thickness of the sour cream.

Put the finished dough in a bag and put it in the refrigerator for 15-20 minutes.

Step 5. While the dough is cooling, prepare the glaze.

Pour sugar into a saucepan, pour in milk and put in butter. Put on low heat and, stirring constantly, bring the mixture to a boil.

Step 6. As soon as the mixture boils, reduce the heat to low and cook for about a minute. Stir all the time.

Step 7. Pour into a bowl and let the glaze cool completely.

Step 8. Take the dough out of the fridge, tear off small pieces and roll them into balls about the size of a walnut with your hands.

Place the dough balls on a baking sheet lined with baking paper. Bake in a well-heated oven at 180° for about 10-15 minutes.

Step 9. While the cookies are baking, prepare the topping.

Grind the corn sticks, pour them into a bowl, add the coconut flakes and mix everything. The topping is ready!

Step 10. Take the cookies out of the oven and let them cool completely.

Now let's make the cookies look like dandelions. First, dip each cookie in the icing, then in the mixture of sticks and coconut flakes. Place on a wire rack or plate to let the icing harden.

Please note that you only need to cover the top and sides of the cookies with icing and sprinkles, do not dip the bottom of the cookies in icing.

The icing will harden in about 10 minutes. After that, it will no longer stick to your hands.

The cookies turn out very cute, airy, festive.

They are tender, fragile, crumbly and very tasty!

For the “Truffles” cookies, we will need the following ingredients.

Dough:

- 5 boiled yolks

- 60 g powdered sugar

- a pinch of salt

- 140 g butter or margarine

- 200 g flour

For decorating the cookies:

- 2 tsp cocoa powder

- 2 tsp powdered sugar

PREPARATION

Step 1. Mash the egg yolks with a fork until fine crumbs form.

Step 2. Add powdered sugar to the yolks, mix thoroughly and grind.

Step 3. Take soft butter, add to the mixture of yolks and powdered sugar, mix.

Step 4. Sift flour and knead the dough.

The dough is soft, flexible, does not crumble. There is no need to put the dough in the refrigerator. You can work with it right away.

Step 5. Form a ball the size of an egg yolk, stretch one edge, getting a cone shape. From this amount of dough you get about 30 cookies.

Step 6. Bake in an oven preheated to 180 ° for 15-20 minutes. After baking, do not take the baking sheet with cookies out immediately, but turn off the oven, slightly open the door and let the cookies stand for another 10 minutes.

Step 7. Roll the cookies in cocoa mixed with powdered sugar. You can simply sprinkle with powdered sugar or dip in chocolate icing and crushed wafers.

The cookies look like candies, but taste very pleasant and delicate.
