1. Shrimp can also be made with large shrimp, but not as nutritious and tasty as small shrimp. The cultured shrimp are fed a diet, not as good as the wild shrimp.
2. The amazing thing about this soup is that the shrimp juice can solidify and expand as it goes into the pan, just like the egg liquid. Do not stir the shrimp juice into the pot, a stir will be broken, solidified, you can stir.
