Instructions:

1. Using a vegetable peeler, slice the cucumber lengthwise into thin, flat strips.

2. In a bowl, mash the avocado with lemon juice, salt, and pepper.

3. Lay out the cucumber strips and spread the avocado mixture evenly over each strip.

4. Place a slice of smoked salmon or turkey on top of the avocado.

5. Carefully roll up the cucumber strips and secure with toothpicks if needed.

6. Chill in the refrigerator for about 10 minutes before serving.
